I've seen a handful of peas or their family be newly diagnosed as needing to be gluten free and others just trying to avoid gluten.
I thought maybe we'd have a thread with different ideas, products, and recipes.
I like Le Veneziane Fettucce. It is made from corn. Almond flour tortillas or corn tortillas. I do not like the coconut ones.
Almost everything that is truly keto is gluten free, but you still need to check ingredients on processed keto foods.
Cheesefolios can be shaped into taco shells or crunchy buns.

Simply Chips (Lay's and Ruffles style) are a favorite of ds, ds, and I.
I make my own pasta with KA Measure for Measure GF flour. Other GF pastas have corn which we are allergic to.
KA flours - baking, pancake/waffle, brownie, and muffin.
I make pretty much everything from scratch due to anaphylaxis allergies on top of Celiac. On the rare occassion I do get dd packaged cookies, she really likes Enjoy Life and Kinnikinnick brand.
I use Enjoy Life chocolate chips for myself as they are free of top 8 allergens AND have no vanilla.

(Obviously) Tastes are personal and what some people love you may not. Also, your tastes change along the way. There are several brands I don’t like that people just love, like Bob’s Red Mill (except 1:1 flour), Tinkyada, Jovial, Schar, Amy’s frozen foods (made me sick), Alexia frozen potatoes (made me sick).
Here are my favorites: Bell&Evans frozen chicken tenders or nuggets Applegate deli meats, frozen sausage, frozen nuggets Feel Good Foods - frozen appetizers Katz, everything they make organicgirl vinaigrette Immaculate Baking Co, refrigerated cookie dough Manini’s fresh pasta, four, or pizza dough, but not breads Sabra hummus Food Should Taste Good chips La Brea bread Late July tortilla chips Cheetos Simply Udi’s hot dog buns, toasted, used as garlic bread Udi’s frozen dinner rolls or baguette Brazi bites Pamela’s mixes (bread, cake, flour) Nature’s Path cereals Goodie Girl cookies King Arthur mixes and flours (brownies are amazing!) Le Veneziane pasta Isibisi pasta Barilla pasta 4c bread crumbs Krusteaz flour Lance’s crackers Kraft Mac n cheese Oreo cookies
Mikey’s - horrible, horrible products. They seem to get good reviews but I found them inedible.

The most shocking thing I have found is that Krusteaz Gluten Free All Purpose Flour works amazing as a substitute for regular all-purpose flour. I do lots of baking and it is the one that I have found to work the best as a 1 to 1 substitute.

I'd really like to make gf tortellini, but our dough last year sucked. 9oz KA Measure for Measure GF Flour by weight 6oz Whole Eggs by weight (or about 3 whole large eggs plus one yolk Water and extra flour as needed for sticky or dry dough. I combine mine in my KA mixer with paddle and then by hand. I chill mine for at least 2 hours. When I work with the dough to use in my KA shape attachment, I make balls the size of golf balls and keep covered so they don't dry out. I out in one ball and start to process it then add more. Don't work it for the pasta roller. Just flatten enough to start it. As it doesn't have gluten it doesn't need to be worked.

I lean towards trying to be GMO free so I pick up Namaste mixes. Sometimes it seems a bit gummy but not enough to bother me.
Brazi Bites and Chebe are a commercial version of Pão De Queijo a Brazilian cheese bread.

Thank you for starting this. I was diagnosed with celiac several months ago and am still fumbling my way through the GF world. I’m excited to read everyone’s experiences.
