I crack them on the counter. I've never smashed it in too bad, I don't get shell in the egg. The counter is the same every time, where you use different bowls or pans so I'd fell I'd need different amounts of force for each edge of different bowls.

I crack it on a sharp edge, usually a water glass. Tapping it on a flat surface doesn’t usually give me a clean break.

Tap it on the bowl or measuring cup--where ever I'm going to drop the egg into.

I use the edge of the bowl and almost never have stray shell pieces. Many celebrity/tv chefs have said to use the counter to avoid the shell pieces (Ina Garten for one) but I find it awkward and messy.

Technically you're not supposed to tap it on the edge of the bowl b/c you'll be more likely to get little shell pieces in it. But I always see chefs on tv do it that way. I usually tap it gently on the counter, but not enough to break it open enough to spill anything. Except for last week when a VERY thin shelled egg splattered on the stovetop.

I tap mine on the inside edge of the bowl, that way it only drips into the bowl. I open it with two hands, because I never learned the cool trick of opening it one handed. And I crack it into a custard cup when making something where the egg has to be added to ingredients already in the main mixing bowl, just in case I decide I don't want to use that egg for some reason. And as soon as I'm done handling the egg/egg shells, I wash my hands.

I crack it on bowl - if I crack it on counter some dribbles down the counter. If I get a piece of shell in the bowl I use one half of the cracked egg to scoop it out.

I always crack the egg into a separate bowl - partly because my mother taught me if you ever see red in the yolk don't use it(?), and also I HAVE to remove that little white stringy thing. I cannot stand it! I get a fork and pick that string out before using the egg!

I cannot stand it! I get a fork and pick that string out before using the egg! I always used to pull out the stringy thing too! I learned that from my mom, who named it the ganglia for some reason. Gotta pull out the ganglia. Then one day I just stopped.

I’ll be the outlier.
