When I need to crack a raw egg for baking, I tap it on the counter and then open it over the bowl. Watching cooking shows on tv, it seems they often tap the egg on the edge of the bowl. When I do it that way, I always end up with egg running down the outside of the bowl which is why I tap on the counter. I see that the tv chefs (I'm talking about you, Bobby Flay!) also get egg running down the outside of their bowls so it isn't a matter of me being a klutzy egg cracker.
What do you do?
(Wonders if this topic will turn controversial) (No, I didn't make it into a poll because I knew I would leave out some option and everyone would want that missing option)

I tap it on the bowl. If I did it on the counter I'd worry about the mess if something went awry.
ETA: unless I'm not paying attention, I don't get any on the sides of the bowl. Tap gently just to crack not crack open, then move it over the center and open with both hands.

On the bowl. How do you not get egg on the counter yet you get egg on the bowl? If you can do it with one why not the other? 😊

I crack over a small bowl in case the egg is bad. Also it helps keep shell pieces out of whatever I’m making. Takes a few more minutes but worth it to me.

I always did it on the side of the bowl. However I just saw somewhere that if you do it on the counter it doesn’t push the shell inward, making it less likely to accidentally drop shells into your bowl. So I am trying this approach now.

I do it on the edge of the counter, mainly because the edge is wider. This is just me, but in my mind, I feel like I don’t have to hit it as hard since the edge of the counter is more stable than a bowl edge. But, I’ve done both, I just prefer the counter edge.

I was glad that I’d cracked it over another bowl. I tap the egg on the counter to crack it, then into the bowl. Some cook at some point or another said that you get fewer shells in the mix by doing it that way. I think that has been true, so I continue to crack on the counter. And yes, a little bit often gets on the counter.

Always over a small bowl or glass measuring cup. I don’t want to have to pick a stray piece of shell out of whatever I’m making.

I always crack on the side of the bowl. If I get a piece of shell in it, it’s easy enough to lift out using the rest of the shell.

On the bowl. How do you not get egg on the counter yet you get egg on the bowl? If you can do it with one why not the other? 😊 Sometimes I do get egg on the counter. But the counter stays in one place and I clean it when I am done. If I have egg running down the side of the bowl then it gets all over the place when I move the bowl to another location on the counter. Also I don't tap the egg on the edge of the counter, I tap it on the flat surface. I feel like the rim of the bowl or the edge of the counter push farther into the shell due to their shape and break it into smaller pieces that I am more likely to drop into the bowl along with the egg. I usually open an egg into a small bowl and then pour it into the main mixing bowl after making sure there is no shell. The small bowl isn't weighty enough to tap the egg on anyway, so I would have to tap it on the main bowl and move it over to the small bowl, risking shell falling in the main bowl after the tap.

I always use the edge of the counter and can’t recall a time when egg would run down the side.

I actually end up with shells in the bowl more often when I crack it on the counter (actually a paper towel on the counter because i dont want egg on the counter.) I am going back to cracking it on the edge of the bowl

Edge of the bowl. I can usually crack them without leaks, explosions, or shell in the batter. DH pretty much bangs the egg and ends up with egg everywhere. He now has an elaborate set up when he makes eggs: paper towel on counter, sharp knife with sharp edge up that he holds with one hand, and cracks the egg with the other hand. Cracks it enough that he can open it without further mess. He still ends up with dribbles though. However, I'm not allowed to help him.

I use a butter knife and tap it with that. In my mind I am more likely to get a straighter crack and I can open it neater.

Either the bowl or a measuring cup, never on the counter. Never occurred to me. And you can always wipe the side of the bowl if necessary.

I actually tap the egg against another egg either over another bowl or over the skillet. I then open whichever cracks.
The winner of that round moves onto the next, LOL.
I have never hit them together hard enough to break both eggs.

Use an extra bowl in case of bad egg. Tap lightly on the edge of that bowl, just enough to get a crack I can insert my thumbnails into. Pull the shell halves apart gently. Usually get two shell halves I can use to tip the egg back and forth to separate if I have to. Don’t think there is ever egg running down the side of the bowl…

Ive always tapped on the counter and then added into the bowl as cracking on the side of the bowl has a higher chance of getting shell pieces.

I crack mine on the counter. No real reason other than that’s the way I’ve always done it.

If I'm using a heavy glass bowl, I'll crack on the side of the bowl.
If I'm using a lightweight stainless steel or plastic bowl, I'll crack on the edge of the counter.
If I'm cooking with my kids (young adults), they will insist on cracking eggs on the flat of the counter, because they had to do it that way in food science class at school.

On the bowl. How do you not get egg on the counter yet you get egg on the bowl? If you can do it with one why not the other? 😊 My first thought! I have painted cabinet doors. I'd rather clean a glass bowl than worry about egg damaging the finish.

I crack mine on the edge of a smaller bowl, just in case of bad eggs or shells that fall in, etc.

(No, I didn't make it into a poll because I knew I would leave out some option and everyone would want that missing option) Hahaha too funny! There has been a bit of butt-hurt lately with missing options on polls! I'm guilty as much as anyone, I'm still triggered over not having cereal or toast as a breakfast option! On the bowl. How do you not get egg on the counter yet you get egg on the bowl? If you can do it with one why not the other? 😊 Sometimes I do get egg on the counter. But the counter stays in one place and I clean it when I am done. Or....... you could clean the egg off the side of the bowl before you move the bowl. If I'm using a glass or ceramic bowl, then I crack my egg on the bowl. If I'm using a plastic bowl, then I crack my egg on the bench (counter). Either way, I wipe up any spills straight away. It's easier to clean it straight away than wait until it's starting to dry. What amazes me is when I see people on cooking shows crack an egg and put it into the bowl with one hand! How do they do that? I tried it once just for fun, and it went everywhere - half the shell ended up in the bowl!

Thank you to the several peas who pointed out that option. The other reasons I mentioned make the counter a better choice for me. Out of curiosity I googled best way to crack an egg and ended up on the website eggs.ca, some sort of Canadian egg council, I guess, and they say that using the edge of the bowl is most common, but that the flat of the counter is the best way to avoid shell in your bowl.

I use the edge of the bowl and almost never have stray shell pieces. Many celebrity/tv chefs have said to use the counter to avoid the shell pieces (Ina Garten for one) but I find it awkward and messy.
