I have been making a bunch of soups and freezing them for easy dinners. So far I have made chicken tortilla, chicken enchilada, tortellini, hamburger, and loaded potato. What are some of your favorite soups?

Thai Chicken Meatball Soup: it's a NYT recipe and just so good. I figured out a shortcut, and just use diced, sautéed chicken breast rather than make the meatballs. I coat the chicken with this: www.amazon.com/gp/product/B00KYT47JW/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1. I make it at least twice a month. #2 is a green chili enchilada chicken soup. Very easy- Sauté 2 diced chicken boobs and 3 bunches of green onions, green parts sliced in olive oil. Add 6 cups of chicken stock. Bring to boil and then reduce to simmer for 20-30 minutes. Add 1 large can of green chili enchilada sauce (I like the medium, but usually can't find it, so mild is fine). Heat. Serve with lime juice and chopped cilantro over rice.

I don't make soup very often, and when I do it's usually some kind of pumpkin (butternut squash) soup. This one is my favourite, because I don't have to chop anything up: No Chop Pumpkin Soup

So far this fall I’ve made: Chicken & Wild Rice, Corn Chowder, Pumpkin Curry, Dill Pickle, Loaded Baked Potato, Tomato-Basil Bisque, and Zappa Toscana.

I actually really like a nice, really smooth/pureed tomato soup, but sadly, my stomach does NOT.

I make a base vegetable soup using a package of soup vegetables, chopped in food processor. I add a lot of water (at least 2 quarts). I cook for an hour and then divide into at least two parts. You can then add pasta and beans (I add more water and put raw pasta right into it to cook), or add chicken, spices and sliced tortillas, or add seafood and Old Bay seasoning, etc. It’s a great way to minimize work.

A clone of Olive Garden Chicken Gnocchi Soup.
An Instant Pot tomato soup.
A simple and quick chicken noodle soup.
And while technically not a soup- chili. I make a big pot and freeze containers for a quick and hearty meal with cornbread and and salad - dinner is done.

We love soup in my house. I came across this version of Pasta Fagioli Soup using a jar of plain spaghetti sauce and WE LOVE IT. I've shared it lots of times and it's in all my friend's rotation now. I think its such an easy pantry ready soup done in no time at all. togetherasfamily.com/pasta-fagioli-soup/and this is a family staple. Caldo de Res (beef soup). I just made a big pot for my parents and they were in heaven. Here is an excellent recipe you can follow. I get the beef shanks at a local carneceria and ask them to cut the big meaty bones in half. You gotta cook these for a couple of hours until the meat is completely tender and falling apart, make sure you skim the top of form/extra fat. Now adays I pressure cook the beef and then dump it in the pot on the stove to finish cooking. Saves a lot of time, I PC them for about an hour. If you are going to use chayote then make sure you peel them and they are a hard root vegetable and take longer to cook so I put those and the carrots in first. Serve with steamy hot corn tortillas and I always serve with my rice on the side, or in the bowl. Lime squeezed on top, some salsa. I made a batch the other day, and we sat out on the new patio with the fire pit and mugs of smoky soup and it was the best. ETA: snickle I always make a big batch and freeze it down in servings in plastic takeaway containers. I don't defrost it in the containers.

So, do you puree the zucchini before putting it in? Also, do you have a recipe for the Mushroom and Zuchini soup? Thanks!

Vegetable soup mostly in winter
Corn chowder. I failed to make any this summer when corn was in season.
I make chicken broth every few months for the freezer. I always keep some cooked chicken as well so I can make homemade chicken soup for when one of us is sick.

Then freeze for a day then pop the cubes of soup out and out them into individual freezer bags. I've recently made spicy crab and corn chowder, lentil soup, Greek avgolemono, and beef and barley soup (trying to recreate the way my grandmother made it.) I'd add recipes, but I mostly was winging it.

Previously I used ziploc bags but I just got Souper containers from Amazon. I freeze them in individual portion sizes. Very convenient for sending soup for my 7 year old to eat for lunch at school.
