I need individual counseling before I just can't function anymore, but I have no idea where to start.
When I look online, they have all of those search things where you input some information and the match you with people
Is that a thing? I wonder if those people pay because they don't have enough clients or something and there is no way to know if they are good.
At the same time, how else do you pick?

I'd start with calling my primary care doctor. They always have some prescreened recommendations. Maybe check with your insurance companies. They can probably give you names of counselors they cover.

I used teladoc to find my therapist and she was wonderful. She was just on there because her office moved to online appointments during lockdown but her schedule stays full.

I would start by calling your doctor and asking for referrals. You can check your insurance company's website to see who's in network on your plan. I think it'll be easier to do video therapy, because so many therapists are working from home due to COVID. I would go w/someone who was referred to you. If you have friends who have been in therapy and you're comfortable you could ask for a referral.
Good for you for doing this for yourself. When you contact a therapist let them know that you feel that it's urgent and why. You're going to get through this and thrive. You will be happy, again.

(employee assistance program) They are a great resource

I found my therapist through a referral process. My PCP referred me to a psychiatrist to manage some meds, then he gave me a list of referrals. Look for a licensed therapist. I find "good" is a very subjective adjective. You want someone you feel a connection/understanding with. I went to one therapist long ago that I knew couldn't help me in the first 5 minutes. Everything about her rubbed me wrong. My current one, I knew she was "right" in about the same amount of time. Even if it takes a few sessions you will know pretty quick if you can trust them with your thoughts/feelings no matter how off the wall the thoughts seem to you.

I have had a really good experience with Better Help. They match you with someone, then you can read their bio and accept/decline. If you get started and decide it's not a good fit, you can switch therapists. I would say they did a good job with mine- I have stuck with the same therapist the whole time. I did therapy for a few months with her and we decided I had gained the skills I was looking for so I stopped for awhile. New things came up and I was able to sign up again and meet with my same therapist with no problem. I think it's around $300 per month to meet weekly (either video or phone) plus you can message back and forth within the app throughout the week.

In our part of the country you can't find a therapist taking new appointments - they are either overwhelmed, don't take insurance, and charge outrageous fees ($600/hour is not uncommon right now).
Our EAP at my job provides a discount with BetterHelp. My coach there has been fabulous. My "problems" are really nothing compared to what so many others are going through, but it is nice to get a different perspective.
