I like chicken mince ones and make these with various flavours. My fave is with a Thai curry paste and coriander

I generally use beef and hot Italian sausage. They are very good, but not great.

I’m Italian. My family has always used a mixture of pork, beef and veal. The rest of the ingredients, for anyone wondering, are freshly chopped garlic, parsley, basil and oregano, bread crumbs, an egg, and grated Romano cheese.
If not making meatballs, we used large chunks of pork, beef and veal cooked in the sauce (aka gravy).

I use ground beef and pork. Here is the recipe I use.
Italian Meatballs
★★★★★ Italian, Meat Prep Time: 20 mins Cook Time: 4 hours Servings: Serves: about 24 meatballs Source: Chefsavvy.com INGREDIENTS
1 pound ground beef 1 pound ground pork ¼ cup onion, minced 2 cloves garlic, minced 2 tablespoons parsley, chopped 1 cup Italian breadcrumbs 2 eggs ½ cup parmesan cheese, grated salt and pepper DIRECTIONS
Add beef, pork, onion, garlic, parsley, breadcrumbs, eggs and cheese to a large bowl. Sprinkle with a pinch of salt and pepper. Mix with your hands until combined.
Form into 1 or 2 inch meatballs. I made 24 meatballs.
Lightly grease a baking sheet. Bake 400 for 15 minutes.

When making meatballs do you use ground beef or the meatloaf mix of beef, veal & pork? Or something else? Was having this discussion with a family member and was just curious what others do. I go back and forth between the two. I get veal/beef/pork from the butcher. Keep in mind that I NEVERRRRRRRRRRR eat veal (too cruel), but my meatballs are the best I've ever had and that's saying a lot (coming from both sides of an Italian family).
The basic ingredients are the meat, 2 eggs, breadcrumbs (I used to only use bread that I made into breadcrumbs), parmesan cheese, garlic, parsley, basil, oregano and red pepper. Add water and mix until the consistency is perfect. I shape them and drop them into my sauce (homemade, of course!), and then cook it ALL day. The meatballs are definitely cooked all the way through. I don't care for them if they're fried, oven-baked or microwaved. They DO cook if you just drop them in the sauce and let it cook for 5 hours or more.....
