I just made my first chaffle. Well, more accurately, instead of a mini waffle iron, I accidentally ordered the mini griddle so I guess I made "chancakes" instead. I hadn't heard of these until two days ago. After seeing how the first pancake turned out I realized I can also use this to make a bread substitute for the Beyond Burgers that I buy at Costco. The chaffles are 1 carb each.
They are made from an egg and 1/2 cup of mozzarella cheese. Sounds gross, right? They also recommended adding a teaspoon of almond or coconut flour for a better texture. The recipe consists of an egg and 1/2 cup of shredded low fat mozzarella cheese and a spoon of almond flour if desired. One site also recommended Choc Zero Maple Syrup, a sugar-free syrup.
I decided to make the original version for my first attempt. I used a mini food processor to mix the ingredients because I didn't want clumps of cheese. A single recipe makes two of the 4-inch pancakes and I figured I would just go ahead and make enough for tomorrow so I didn't have to clean the appliance twice because I wasn't sure how difficult that was going to be since it can't go in the sink. I have to admit, the griddle was basically clean-looking when I removed the last cake, so it isn't going to be a major hassle to clean. I don't know how the waffle maker would be. At first I was upset with myself for ordering the wrong thing, but now, I am happy with it because I can use it for more things.
Now, these are not low in calories because of all that cheese, but they are only 1 carb gram and since I am reducing my sugar, I decided to give them a try. I figure I can cook a single beyond burger and make the "bun" for it in the same little gadget. It is quite small, so it won't take up much room in my cupboard. Plus, it was only $12.
Now as to the taste, I can taste the cheese and egg. She said she can't, but can. It was actually pretty good though. I am not a huge pancake or waffle person so I will probably only make these once a month or so. I usually feel quite sick after eating waffles or pancakes at a restaurant but I don't after eating these. I think the difference is the zero sugar maple syrup. The next time, I plan to try it with a little less cheese and increase the almond flour. And maybe use 2 eggs.

FLAVOR VARIATIONS
Garlic Parmesan – Mozzarella, parmesan, egg, minced garlic (or garlic powder), Italian seasoning, and baking powder. These are like garlic bread in waffle form. I like topping them with extra melted mozzarella, grated parmesan, and a touch of parsley.
Cinnamon Sugar (Churro) – Mozzarella, egg, almond flour, psyllium husk powder, baking powder, butter, Besti, cinnamon, and vanilla. Who doesn’t love churros?! You can eat these chaffles whole, or for a more churro-like experience, cut them into sticks.
Pumpkin – Cream cheese, mozzarella, egg, Besti, pumpkin puree, coconut flour, pumpkin pie spice, baking powder, and vanilla. I like to use homemade pumpkin pie spice for these, but store bought works as well. A dollop of whipped cream, a sprinkle of cinnamon, and some keto maple syrup makes them just perfect.
Jalapeno Popper – Cream cheese, cheddar, egg, baking powder, bacon bits, and jalapenos. Many of you have asked me for spicy chaffles, so I made these jalapeno popper flavored ones! Melted cheddar, bacon bits, and a couple jalapeno slices make the perfect topping.
Pizza Chaffles – These are based on the basic chaffle recipe, with added seasonings and pizza toppings (I love marinara, mozzarella, and pepperoni).
Chocolate Chaffle – A sweet cream cheese center sandwiched between two chocolate waffles makes these reminisicent of oreos. If you prefer chocolate chip instead of all chocolate, make the cinnamon sugar recipe, but omit the cinnamon and add a couple tablespoons of chocolate chips.
