So I am in need of some Pea tested and Pea approved recipe ideas to use fresh jalapeño peppers.
Last Friday our grocery order arrived. I had ordered .25 pounds of fresh jalapeño peppers, which usually results in getting 5 or 6 medium size peppers.
I opened the bag and I was stumped. There were a lot more than 5 peppers.
I thought they might have missed the decimal point and given me 25, but counted 15 peppers.
I thought that maybe they moved the decimal point and gave me 2.5 pounds, but weighed them and it was just under 21 ounces.
I have no clue how the shopper could be off that much.
So now I have to come up with something to make with fresh jalapeños besides my spicy slaw to go with fish or adding them to a small batch of pineapple jam (which is really, really good).
There has to be something besides jalapeño poppers, so I am hoping someone will be willing to share a favorite recipe that they know turns out well.
I hate to Google recipes right off because I invariably get the 5 star review that lists all of the things they added/omitted that end up making an entirely different dish.

When I have too many I prep them and then freeze for later. I haven't tried but I have seen several people adding them to margaritas lately.

Make fermented hot sauce. All you need in addition is a jar, water, salt and time. And a blender at the end. There are recipes all over the place.

When I have too many I prep them and then freeze for later. I haven't tried but I have seen several people adding them to margaritas lately. This, and I don't prep them at all. Just throw them in a zip-lock sandwich bag and put them in the freezer. They can be de- seeded and they dice up easily when frozen.

Slice one very thinly and do a quick 5-10 min pickle with the juice of one lime and some salt. It's delicious on so many things, and the pickling takes out a lot of the heat, but the flavour is still there.
Trust me, you will thank me. 😁

Jalapeno cream cheese chicken.
Season chicken breasts or thighs to taste. Bake.
Mix 1 brick of cream cheese Diced jalapenos to taste (I usually use two, depending on their size and how much spice you like.) Diced green onion to taste (anywhere from two to six) Shredded cheddar cheese (about a cup, give or take) (This mixture obviously has quite a bit of flexibility.)
About 10 minutes before the chicken is done, slather that goodness all over the chicken. Finish baking.
And call it good! Serve with rice or baked potato and a salad or veggie of choice.
This is our favorite chicken recipe right now.
Added: This is super, super easy too. That's my favorite thing about it. The hardest part is chopping up the jalapenos and green onions. LOL.

Reseed and derives rib one. Very thinly slice into ribbon shreds and add to a coleslaw for some delicious pep! I will also sometimes add a dash of cumin or Tajin seasoning too. It’s great with or on pulled pork sandwiches or pulled pork topped baked potatoes.

Today at Sam's Club is saw them wrapped in bacon. I didn't notice what else was in them, but it looked interesting.
