My 15 year old daughter has gained so much weight in the past year. We had an enormous panel done to see if there is any underlying medical problems. One thing that came up is sensitivities to gluten and dairy. It was suggested that she eliminate both for a couple of months. She is not receiving the news well To help her transition into this, I am searching for yummy tasting gluten-free breads and dairy-free cheese that will ease her mind that anything new is going to taste "SO GROSS!!" For those in the know, what do you suggest? We have all the major stores near us, so suggest away! Thank you so much!!

A friend recommended Canyon Lakehouse bread to my niece. It’s in the frozen section. As far as dairy free cheese I have no clue

About the cheese…I read that if the label on the cheese says 0% sugars, then the cheese has no lactose. My husband is sensitive to cheese so I did a little reading but I’m not completely sure if what I wrote is right. Just wanted to throw that out to you.

When they said diary, did they mean cow's milk or all milk? Or lactose? I'm lactose intolerant. I can eat diary but cannot have dairy that's heavy in fat or lactose. I can have cheese that's typically low in lactose or made with goats milk. There's some really good goats cheeses out there.

Honestly, I'm not sure that "yummy tasting bread" and "gluten free" can exist in the same sentence. That said, I kind of like Rudi's gf bread. Be careful though because Rudi's brand does make some regular gluteny breads. Udi's is okay, but the slices are small and often have large holes caused by air pockets. And it's expensive. Trader Joe's sells some that's not bad. As for the dairy-free...I'm assuming you mean all dairy, not just lactose? Does that include goat's milk? If not, then goat's milk cheese is excellent. -- I know there are vegan "cheeses" but I don't know anything about them.

Honestly, she should just skip the cheese. I became highly reactive to the A1 protein in dairy about 6-7 years ago. I’ve yet to find a slice/shredded cheese that I really like.
At about 5 years out, I started thinking vegan cheese was ok. But just ok! IMO, she needs to give up dairy until she forgets what it tastes like. That will take at least a year or two. I can successfully drink A2 milk, so she could see if she does ok with that. But she probably needs to eliminate all dairy for a few weeks and then reintroduce it.
Redi Whip has an almond squirts cream that’s really good. And whipped coconut cream makes a great substitute for whipped cream in a recipe. I use Califia almond creamer in place of cream in a recipe (like soups). I get it at the American commissary, so it should be available in the US. I like oat milk vs almond or soy milk in recipes; I think the flavor is more neutral. But I don’t care for the Silk brand of oat milk—it has a weird taste.
If you search old threads, I know I’ve given specific brands before that are US brands. Ben and Jerry’s vegan ice creams are pretty good!
I make my own cheese from tapioca starch that I’ll use as a spread or I’ll add some Daiya cheeses if I need the mouth feel, but only a little. Kite Hill makes a ricotta and a cream cheese that I do like. I used an unsweetened/unflavored soy yogurt as a sub for sour cream, but now I don’t remember the brand. It’s all different here in Belgium.

I agree with Hop2…gluten free bread tastes differently to everyone. There are brands my family loves that I think tastes like yoga mat. I also agree it’s best to go without for awhile before eating GF bread.
But if you do want to try some, Canyon’s Bakehouse gets pretty good reviews from a lot of people. I like Udi’s hamburger buns or hot dog buns that I will toast and use as sandwich buns. Their frozen dinner rolls or baguettes are actually good, but usually contain air pockets. My favorite is La Brea Bakery, but it’s hard to find. Also Three Bakers. The key to most GF bread is to toast it.

Violife and Miyoko's are the best vegan cheeses, in my opinion. Miyoko's is our favourite, but it's harder to find here, so we need a back up. I do think you need to take a break from cheese to adapt to vegan cheese.
We just got Silk NextMilk here also, and it is just excellent. It's the first plant milk that doesn't have any off taste to me.
I have PCOS, which comes with a slog of weight issues, too. Most people say GF and dairy-free is best for that too, but I haven't kicked gluten yet.

Daiya is my go to for cheese. I try to stay away from the soy since practically everything already has soy in it. Their Mac and cheese is gluten free too.
For other dairy free stuff I love So Delicious.
Just have her expect it will taste So Gross and then it won’t be as bad.
I agree with taking a break. I’m used to it, so it doesn’t bother me. I’d probably think that eating something dairy is gross now since I’m not used to that anymore.

After she goes cold-turkey on dairy and gluten for a few weeks, have her try goat/sheep's milk cheeses. They are really delicious and I can handle them with no problems. I am somewhere beyond lactose intolerant and not quite allergic to cow's milk products.
I like almond milk cream cheese spread, too.
