Is it for a specific recipe or just in the general notes? If it is for the recipe I assume it is for flavor and texture. We made one sorbet that was just canned oranges in juice and seltzer water to top it off. Another that used lemonade and frozen or fresh blueberries. Now I see that it was just for the fruit sorbet. Page 19 of the recipe booklet. It says "canned fruit with no added sugar (fruit in water) cannot be processed by the unit." But it seems to indicate that you can use fruit in juice, but that also has no added sugar. And what's the difference actually between using canned peaches that are packed in water vs. a fresh peach? I guess it doesn't matter in the end because I plan to use more frozen fruit, but I have some cans of peaches that would taste yummy as sorbet but they're packed in water not juice. My guess is that fruit packed in water will freeze more solidly like ice cubes. Like Elaine mentioned, anything with sugar/syrup in it won’t freeze the same. Whole frozen fruit is less dense than ice. Even if it’s totally frozen there is more air in it which would make it easier for the machine to churn. I vaguely recall reading somewhere that adding some vodka (maybe 1-2 Tbsp?) to fresh or maybe frozen fruit that you plan to put in ice cream helps to make the resulting fruit chunks less ice chunk like inside the finished ice cream, but now I don’t remember where I read that. A couple weeks ago we made some strawberry ice cream with fresh strawberries in it. I didn’t add anything to the chunks and they were like little hard ice cubes in the ice cream. It was only afterward that I remembered reading about that and now will have to research it a little more going forward.

Okay, made my first pint and it was a bit weird, not terrible just weird. Since there was no vanilla ice cream recipe I used the enclosed recipe for chocolate chip, but did not add the chips. I must have done something wrong. First thing was the texture was okay, tad crumbly so did respin but still a bit crumbly but almost creamy. Maybe the freezer I used is too cold. Will use the other not so cold freezer for the next batch. The weirdest thing was while eating the ice cream it left a disturbing gummy residue on the roof of my mouth. The recipe contained milk, heavy cream, a little cream cheese, vanilla paste and sugar. The roof of mouth residue thing was so odd and uncomfortable. I am committed to liking this device and guess there is a learning curve. I am not much of a cook so have minimal experience in that area. Maybe I am missing something. Have tried to look up recipes but too impatient to weed through all the add nonsense on Pintrest and blogs so ordered a recipe book from Amazon. How is everyone else doing? Where do you get your recipes? I haven’t tried my Creami or the recipes that came with it yet, but will comment in general having made a lot of homemade ice cream in my regular Cuisinart ice cream maker. I think some of it boils down to personal preference. When I made my first batches of ice cream I followed those recipes to a T and most that I’ve used only called for heavy cream. I found that for me personally, if I only use heavy cream the texture of the resulting ice cream has an almost buttery mouthfeel that I don’t like for ice cream. After that I started using a little more than half heavy cream and the rest 1-2% milk and I like it so much better. It feels lighter and doesn’t have that same greasy mouthfeel that I didn’t like. Before this thread I have never heard of an ice cream recipe that calls for cream cheese. To me that seems like a weird ingredient for ice cream and I’m not sure I would like that. I like the taste of it just fine in other things but to me it doesn’t seem like it would combine very well with the other typical liquid ice cream ingredients because even softened it sits in a clump. I wonder if that is what is causing the texture you are describing. Thank you for the suggestions. Definitely going to try more recipes and adapt as needed.

I think in the end it's going to come down to experimenting and personal preference, because someone earlier in this thread said they really like the cream cheese recipes. I'm not sure what I think about adding cream cheese to ice cream but I'll give it a try at least once. lol. I mean, the results can't be inedible, right? lol

I bought the Prime deal and am thinking of returning it unopened. What's the advantage, in case I'm still on the fence? I already have the Cuisinart with two bowls and have room to keep them in the upright freezer. I also bought the Kitchen Aide Shaved ice attachment. I'm not sure I want to deal with making more little pods. The work load seems the same. You still have to prep something, whether it's the bowl of the ingredients, am I wrong? I get around the prep part by having room to store two bowls. Could it be I'm finally mini apliance weary? I was anti before I got to know the peas and their wonderful descriptions!

I might be which results in the creamy texture, I don't know, but it's really good. The gelatos have been a huge hit as well.

With what you have already, and the room in your freezer to store the cuisinart bowls, I probably would return it. The main difference for my family - that you can't do with the cuisinart - is the ability to dump in cans of fruit, or pieces of fresh fruit, or lemon juice/sugar/water, and make sorbets. You need the shaving/creaming blade to pulverize the frozen fruit into smooth sorbet. I make a LOT of sorbet - it is my preferred dessert. You can also respin anything - including ice cream - that freezes solid after eating just a portion.

I returned the prime deal and bought another machine at Costco. Costco has a better return policy if anything goes wrong down the road. AND it came with two extra pints. We made this last night and it was really, really good considering what was in it naturopathicearth.com/2019/02/21/paleo-keto-cauliflower-ice-cream/PALEO, KETO CAULIFLOWER STRAWBERRY ICE CREAM 1 cup frozen cauliflower florets 1 cup organic strawberries (fresh or frozen) 2 frozen bananas, unripened 2 peaches, no pit 2 teaspoon cinnamon 1 teaspoon chia seeds 1/3 cup full-fat coconut cream 1/2 tablespoon lemon juice

I made it over the ice cream making hump, first batch was a bit sketchy but now, holy cow! This machine is fantastic! Made outstanding strawberry and salted caramel ice creams. Looking forward to making the Grapefruit sorbet. Thank you elaine!

I get around the prep part by having room to store two bowls. Could it be I'm finally mini apliance weary? I was anti before I got to know the peas and their wonderful descriptions! I own the Cuisinart ice cream maker too. From what I understand (still having never used the Creami I just bought at Costco) the difference is that while yes, you still have to prep the ingredients in advance, after you put the frozen ingredients into the machine you immediately have ice cream that’s the texture you can scoop. With my Cuisinart, even with keeping the bowl in my chest freezer, chilling the ingredients going in and churning it for 20-25 minutes, the resulting ice cream comes out only soft serve consistency. It still has to be put back into the freezer for a few hours before it can actually be scooped. For me, the Creami process would be preferable because the ingredients would be easy enough to mix up the day before, put them in the Creami containers to freeze overnight and have decent ice cream right away out of the machine. The other advantage I see is the ability to make several smaller quantities of different flavors so various family members can each have their own vs. having to make a larger quantity of a single flavor that maybe not everyone wants.

My Creami was supposed to be here today but I got an update last night that delivery will be tomorrow instead. Bummer.
But I did find cherries on sale a Kroger today ($1.99/lb), so I am prepping them tonight to put in the Creami tomorrow for ice cream on Wednesday.
I’m also going to try a chocolate protein shake with PBFit added. A friend of mine has been making milkshakes of those and says they are an awesome morning treat on hot days.

I FINALLY opened my Creami, after having it sit here for a few weeks in its box. I was reminded of how my Instant Pot sat for while before I opened it. But then I remembered how fun and not difficult my IP was after I figured it out, so I thought the Creami is going to be the same! lol First thing I did was wash the pints and make up two -- one with just pineapple chunks and the juice from the can, and the second with a Fairlife chocolate protein shake with a tablespoon of chocolate pudding stirred in (I saw that on a FB group). Now I have until tomorrow evening to figure out how to use the machine. Somehow I managed to get the "cup" part (the part that looks like a coffee pot from a coffee maker) off but now I can't see how to put it back. And can't figure out how to open it to free the third container that's inside. Guess I need to crack open that manual, eh?

I made my first recipe this morning! All it was is a Fairlife protein drink and 1 T of chocolate pudding powder. I spun it on "lite" and it's perfect! And it was only 12 hours, not 24. SO good! I have pineapple waiting in the freezer to do for my dh this evening (he's a fruit sorbet fan), and a banana and peanut butter one also in the freezer for me later. I might just eat ice cream for all my meals today. haha

Okay, I will post my question here. That was so strange. The whole thing just disappeared. I have severely reduced my sugar intake because I was entering the neighborhood of diabetes and it scared me. I have lost about 30 pounds so far with more to go. Since I have been monitoring my sugar daily, it has only been high 3 times, and all three times were after I had chocolate peanut butter ice cream. My downfall. I cannot just have 1/2 cup or whatever they think is a serving. I did switch to a small bowl so that I could not overdo it too badly, but apparently I still ate too much because the next morning my sugar was higher. I love ice cream. I figured that I just need to stay away from it all together because I don’t seem capable of eating a serving small enough to not affect my blood sugar yet still satisfy me. Just recently I went to get some Rocky Road and my store was out of all flavors of chocolate other than something called Moose Tracks, something I have never tried, but with that swirl of what I think was caramel, basically pure sugar, I knew I would love it and eat too much. I ended up with something called Mountain Huckleberry instead. It was kind of awful. I mean, it didn’t taste bad, but the huckleberry swirl was so thin and only in the very center of the container that it was just like eating plain vanilla ice cream. I ended up just tossing it out. My question: Have you made a chocolate based ice cream in this that was really good? That tasted like a quality store-bought brand? And if you are making a reduced sugar type, what are you using to make it a decent ice cream and still reduce the sugar in it? I looked on their website and saw a doggie ice cream with banana, peanut butter, honey, strawberries, and dog treats. I would definitely make my boy some of that. When he was a little pup only 8 weeks old, I stopped at a Starbucks drive thru and got some sort of coffee drink. He was leashed to his car seat in the front. I parked and got into the back of my car for something and when I went back, he looked up at me with this white foam-covered muzzle. He had stuck his face into my drink and devoured the whipped cream on top just in the few seconds that I was at the back of the car. He loves sweets. But I know I cannot share chocolate ice cream with him. I would love to make him his own flavor. Talk me onto getting this machine, fellow peas! Can you really make a delicious ice cream that is low in sugar? My friend buys Keto Chow and a Ninja Creami. He says it makes delicious ice cream. Satisfies your low sugar and ice cream craving.

Great!
Interesting about the 12 hours. The recipe book that came with the machine was very clear it needed to be 24 hours as even though the contents are frozen, it need to reach a certain temperature.
I had to buy another 2 packs of pint containers to try and keep up with dh’s demand. 😂. He’s a huge ice cream eater. Currently have two sorbets chilling (pineapple peach and a mixed berry), 2 chocolate iced creams, and a black berry cheesecake ice cream.

I joined a Creami Facebook group and a lot of people said they only waited 12 hours. Maybe it depends on what the ingredients are? I don't know enough about the science of freezing things to explain it, lol. But for a protein drink 12 hours was fine. -- Plus, clearly the Creami is using magic so that's totally beyond me.

So, can I use fresh fruit in my Creami, in just the same way as canned? I have some fresh strawberries to use up. I looked online and it said to puree them first, but why couldn't I just cut them up and put them in just like I did with the canned pineapple? Then some sort of liquid...maybe just milk? Milk is all I have at the moment actually, except for some grapefruit juice. I'm resisting pureeing the strawberries because then I'll have one more appliance to wash.

I tried ours for the first time last weekend, made chocolate and vanilla since we have it at the lake and didn’t have a lot of options for ingredients. If I’m being honest, I’m not a huge fan of the recipes in the recipe book that came with it. I don’t think the sugar and cocoa powder really dissolved very well. The texture and the taste were okay but it was all just kind of, I don’t know, off somehow.
The recipes I use most with our Cuisinart typically use a can of sweetened condensed milk in place of some of the milk and the sugar plus some added milk, the heavy cream and flavorings and finally the mix ins, and I think that makes the resulting ice cream smoother. I don’t like to mess around with cooking the base on the stove to get the sugar to melt, ain’t nobody got time for that! So my thought is to take my usual base mix (which usually makes about 1.5 quarts) and split it up into pints and add the various flavors to each pint as desired and see how that goes.
Someone needs to invent a cheap Rubbermaid type container the exact right size and shape to freeze the bases in so they can be frozen in something other than the Creami container. Then it would be easier to have a variety of stuff on hand frozen and ready to go without tying up the expensive containers. Just pop the frozen base out of the Rubbermaid and into the Creami thing and you’d be good to go. Somebody needs to get on that.

The chocolate recipe I got off of the ninja site. That one was really good and there's tons of Kindle unlimited cookbooks on Prime. They had one that had a gelato that was just basically like eating frozen fudge. It was insanely delicious. You did have to cook it a little bit though, but it was super easy and quick

Canned fruit is softer and if your freezing it with the syrup, the sugar will help it freeze a little softer. Fresh fruit is going to freeze much harder. I would at least lash up the fresh fruit a bit.

I mixed up the pineapple that I prepared yesterday... Just a can of pineapple with the juice it came in (not syrup, just juice). Dh was amazed, lol. And he loved it. There were bits of pineapple still in the sorbet which I didn't like, but then again I don't really love pineapple. But dh LOVED it, and he said the bits of pineapple were perfect because it made it seem "real". lol. He never says anything negative about anything I cook so maybe he was just saying that. But he scraped his bowl clean, so.. I thought it was a bit mild tasting, but excellent anyway. I just made up a strawberry pint -- fresh strawberries that I mashed up with my immersion blender. I also added some sugar to this batch because to me strawberries are always sour. Tomorrow's breakfast is a banana and peanut butter one that I mixed yesterday. I also have peach waiting in there, and the strawberry. And I have a bottle of mangoes that I'd love to use (I can't do fresh mangoes because I'm allergic to the whatever-it-is that's just under the skin). Clearly I need more pints! hahaha
