This always gets complements sent my way.
BANANA NUT BREAD Oven 350
½ cup margarine ¾ cup sugar 2 eggs 1 teaspoon vanilla 2 cups flour 1 ½ teaspoons baking powder ½ teaspoon soda ½ teaspoon salt 1 cup mashed banana ½ cup chopped pecans (or walnuts)
Combine margarine and sugar, mixing until well blended. Add eggs, one at a time, mixing well after each addition. Blend in the vanilla. Combine the dry ingredients; add them alternately with the bananas to the margarine mixture, mixing well after each addition. Fold in the nuts. Pour into a greased and floured 9/5 loaf pan. Bake at 350 for 1 hour (test center with toothpick for done) Cool 10 minutes. Remove from the pan onto a cooling rack.

You got me curious about the many different banana bread recipe I have tried. I went to King Arthur website and this one looks interesting. I wonder how much of an impact the jam gives? 3-4 Smashed Bananas 3/4 C melted butter mix this together
Add 3/4 - 1 C sugar - I use less with the impression I'm being "healthy". LOL
1 Egg 1T Vanilla 1t Baking Soda pinch of salt 1 1/2 c flour
Makes 1 doz muffins - 25 min 350 or 1 loaf 40-45 min 350

use the blackest, mushiest bananas to get the sweetest flavor and moist consistency. also, sprinkle brown sugar on top just before baking.

I'm hoping these will work better for me next time I bake. I recently looked into this and here is a great article about testing.. www.kingarthurbaking.com/blog/2018/03/15/how-to-tell-when-banana-bread-is-donebasically you should use a thermometer and check several depths in the loaf. 200-205 degrees Farenheit, and no spot should be lower.

My friend makes Banana bread with chocolate chips. I thought she was nuts, but I've tried it, and it really was good. I don't have her recipe. She isn't one that "shares" things like that!!

In order to not have a gooey middle, I often end up with unusable end pieces. . . i usually pull it when there is barely a hint of batter on the toothpick (or whatever) when i test it for doneness. the residual heat usually finishes cooking the center. if you pull it when the center comes off clean, the residual heat will keep cooking it and the sides will come out dry. also, when it's cooled down enough that it's barely warm, i wrap it in cling wrap to seal in the moisture. i put it in the fridge when it's cool.

Oh, and you will have to add time. Add 10 minutes at a time and check it with by sticking a strand of spaghetti in it and pulling it out to see if it is done by having the stand of spaghetti clean.

This recipe is more like a banana cake.
Banana Cake
1 stick butter, softened 1 and 1/4 cup granulated sugar 1 and 1/2 teaspoons baking powder 1 and 1/2 teaspoons baking soda 1/2 cup sour cream 2 eggs 2 cups flour 3 ripe bananas, mashed
Preheat oven to 350.Cream butter and sugar with electric mixer. Add baking powder, baking soda, sour cream, eggs and flour and mix on medium until smooth. Stir in mashed bananas.
Grease and flour a loaf pan (my loaf pan is ancient--measures 9 1/4 inches by 5 1/2 and does not have nonstick coating) and pour batter into it. Bake one hour to one hour, 15 minutes until toothpick inserted in center comes out clean. If top is browning too quickly, make tent of creased aluminum foil to allow center to rise. I also put a sheet of foil slightly larger than pan dimensions on rack to catch drips in case the cake bubbles over
Variation--instead of bananas, I used 1 cup thawed frozen mixed blueberry/raspberry combo(drain and reserve juice), substituting berry yogurt for sour cream, approx 2/3 cup extra flour and 1/4 cup extra sugar. If mixture is too dry looking, add back some juice.

This is from one of my cousins. He swears by it-- John's 3-2-1 Banana Bread 3 ripe bananas, mashed well (he says the riper the better) 2 eggs 1 box of yellow cake mix
Mix well, bake @ 350 degrees for 50-60 minutes. Can add nuts or chocolate chips. He sprinkles brown sugar on top before baking. Makes one large loaf.

Google Martha Stewart’s Banana Bread. No matter which recipe I try, I always go back to this one. Very moist. I think it’s the sour cream. Always use real butter. NEVER margarine. Just my opinion

I have not tried this recipe but it recently won a banana baking contest in my area. This variation calls for a classic banana bread recipe with a twist.
This banana loaf was off the charts. A classic recipe, it was dense, moist, very banana-y with a wonderful chocolate swirl throughout.
“One sneaky thing about my prize-winning Chocolate Marble Banana Bread - it's vegan! I bake it whenever I need to use up some bananas and it always turns out well. It's easy to make any banana bread recipe into Chocolate Marble Banana Bread.
Here's how: once your batter is ready, scoop one cup out into a separate bowl. In another heat-proof bowl, add 3 tbsp cocoa powder and 3 tbsp boiling water and mix those together. Stir this chocolate mix into the cup of batter you have separated to make chocolate batter, and then stir 3 tbsp of boiling water into the plain banana batter to keep the two consistent. Then, layer the plain and chocolate batters into your loaf pan, and swirl with a butter knife before baking as normal. Voila!”

Late to the party, but this is my favorite recipe!
Ingredients - 2 eggs - 1 cup sugar - 1/2 cup vegetable oil - 2 cups flour - 1 tsp. salt - 1 tsp. baking soda - 1/2 tsp. baking powder - 3 tbsp. milk - 1 tsp. vanilla - 1 cup mashed bananas (we usually use 3; the deader they are, the better! I've found that if they're frozen, heating them in the microwave for 30 seconds makes them easy to mash.)
Instructions - Beat eggs, sugar, and oil together. - Mix together dry ingredients. - Add egg mix to dry mix. - Blend well. - Add milk, vanilla, and bananas; mix well. - Pour into greased, floured loaf pan. - Bake at 350* F for 1 hour.
Note: my husband and I started using our food processor and just mix everything in there, no order or rhyme or reason, and it comes out soooo smooth and tasty!

My favorite recipe Kona Inn Banana Bread . Original recipe used shortening, I use butter. I also think wrapping it in waxed paper makes it better cause thats what mom did

I do this with brownies too......after baking for awhile, although maybe it would work from the start I just don't seem to remember to do it..... I cover the edges/sides of the pan/mix with foil so they don't get hard.

This one is vegan and incredible! 2-3 small very ripe banannas 1/4 cup applecause 1/4 cup canola oil 1/2 cup sugar 2 TBS molasses 2 cups all-purpose flour 3/4 tsp baking soda 1 tsp ground cinnamon 1/4 tsp ground nutmeg 1/2 tsp salt pre-heat oven to 350 In a mixing bowl mash the bannanas really well. Add the sugar, applesauce, oil, and molasses, and wisk to incorporate. Sift the flour, baking soda, spices, and salt. Use a wooden spoon to mix until the wet and dry ingredients are just combined. Fold in the chocolate chips. Transfer to the prepared pan (9x5). Bake for 45-50 minutes. The top should be lightly browned and a knife inserted through the center should come out clean. Remove from teh oven and invert onto a cooling rack, flip teh bread right side up and let cool. Sally's Baking addiction Banana Bread made with coconut oil is delicious too!

This is my go to. It is from the Costco connection magazine. I use yogurt and coffee in it. So yummy! I make it in my mini loaf pans. When I get a few gallon bags of frozen bananas, I make like a 4 times batch then wrap and freeze the loaves. eta-apparently the whole recipe/instructions aren’t there.
