That's a one-drink situation for me, where I get a single glass of wine. I may or may not actually drink much of it, depending. I have a monthly work dinner that is like this, and that is what I generally do (although my work dinner is two hours, if that makes a difference).
I have mixed feelings, honestly, because I am a person who enjoys a glass of wine with dinner, so I'm just doing what I'd be doing at home, but a lot of people have a lot of issues around alcohol, particularly in my profession, and I'm not sure we're doing people a favor by having so many of my profession's social events involve or even revolve around alcohol.

It really surprises me how many people say they could have a drink or two and still feel ok driving. There has been a zero tolerance attitude towards drink driving in Scotland since 2014. (Different from the rest of the UK). The blood alcohol limit isn’t zero because there might be other reasons why alcohol could be in your system, but it is very low. One glass of wine or a beer could easily put you over the limit. As a result, I don’t know a single person who would choose to have any alcohol and then drive. And I know some very enthusiastic drinkers!

Would it be considered weird to put a one drink limit on the dinner? Every company I've ever worked for has always done the drink ticket route, where everyone gets two, so I don't think it would be weird to do one. Frankly, I don't know why anyone would drink more than that around co-workers anyway. My former company hosted a fancy holiday party every year. They provided us two drink tickets, but there was always a cash bar as well. There was always one person at every party who tanked their career by getting drunk and doing something stupid at the party. Placing bets on who that would be is sometimes the only entertainment at these events.

I can have a drink at the start of the dinner and be perfectly fine by the time I go home.

I travel into a corporate location for work about once a quarter, and we typically have a big meal together. Anyone who wants it has a drink or two, but if I am driving, I just wait until I get back to the hotel and have a post-dinner cocktail there. We don't question who is drinking or how much - adults should know their limits and make responsible decisions.
