We have some pot roast left over and I would love some ideas for the leftovers. Normally I freeze what is left of the meat and we do beef and noodles or a shepherds pie. Any fresh ideas? Bonus points for including the carrots and potatoes that cooked with it. That always stumps me!

I don’t know what left over pot roast looks like, LOL. Whenever we have pot roast my DH eats like he hasn’t seen food for a week and there’s never any left over!
My mom used to slice it up thin and serve it with gravy on toast like an open faced sandwich.

I would just reheat and eat leftovers.
But, since you want to do something else with it and include the veggies, I’d chop up the meat and dice the veggies, and make soup with it. Use beef broth and add more soup veggies (corn, peas, petite Lima beans, etc. I use frozen) to the broth first and cook them until soft, then add the pot roast and those veggies, along with seasoning, and you have soup.

Yup, we just eat it as leftovers for the next day. I rarely make leftover meat into something else.

I'd shred it, smear some refried beans on a flour tortilla add the beef, salsa and cheese and eat a burrito.

I will usually make a container with all the stuffs for my lunch the next day and with what is left, I will make roast beef sandwiches. I tend to buy smaller roasts so as not to have so much leftover meat.

I have done the burrito thing as mentioned by femalebusiness but we usually dice everything up, add a bag of frozen corn and green beans and reaheat. If you had made gravy with the pot roast and had left overs, use that to make the thickening for the stew. If not, you can make more using beef brother and some constarch for thickening.

Fresh baked potatoes smashed with the pot roast on top. It's one of my favorite meals, so keeping it as close to pot roast is a plus.

I used leftovers to make taquitos. I worked in a Mexican restaurant when I was 16 where I learned to make them. I seemed to always end up working a shift when they needed taquitos so I would pull a chair up to the big table and make hundreds of them. At home, I didn’t quite make that many, but I still made plenty. My sister’s would beg me to make them. We would freeze them and then just heat them as needed. I always planned to make some with chicken, but never did.

I love to make tacos with the meat. Steam some corn tortillas, add the meat and any toppings you want. I usually add salsa, diced onion, cilantro, avocado, but it depends on what I have on hand. The little street taco size are my favorite for leftovers because you can make each one a little different.

These are great ideas! Thanks! We get 1/4 cow and had one BIG roast (and several smaller) that I saved for when we had a group over. But then our group got invited to another persons house for dinner after I already started the roast. I brought it along, but there were so many sides to go with it that I ended up with some good leftovers. . My family gets bored with leftovers quickly, so I wanted some new ideas to use it in later (after I freeze them).

Pasties! I just made 2 dozen of them last week. I lay them out on a sheet pan and freeze them, then store them in a ziplock bag. I bake them from frozen at 375 for about 30 minutes until they are brown and bubbly.

Eat it as is (pot roast, roasted potato and peas), with fresh baked crescent rolls.
Edited to add: This meal is one of my current "food prep" meals in my freezer. I use deli containers.

I make vegetable beef soup with leftover roast. Especially with potatoes and carrots cooked with it. Sometimes I'll make a beef stew with it for dh. He doesn't care if the meat isn't cubed for stew.
But I don't usually make soup in thd summer unless its a rainy day.

We’ve done a breakfast hash out of leftovers and folded it into an omelette. Most of our leftovers go with my husband and the 21y/o to work. They much prefer leftovers to fast food.

I’d turn it into a ragout and serve it over buttered noodles. Sauté some onions and garlic, add some red wine and a can of tomatoes, add the cut-up beef and carrots, and simmer for a bit. Or beef dip sandwiches. Or I recently had a short rib grilled cheese sandwich at a restaurant. It was really good and I would never have thought of that.

We just reheat and eat. DH also loves the roast as a sandwich. I try not to make too many potatoes and carrots, so we don’t have leftovers of those. I’m not a big fan of either of them reheated.

I ordered a sandwich yesterday that was delicious! It was described in the menu as "Sliced Pot Roast– Thinly sliced pot roast with melted provolone cheese and parmesan peppercorn dressing on a toast ciabatta bun."

I make big slow cooker meals, and freeze them down in serving sizes for reheating on busy nights when we're home too late to cook. It has never occurred to me to do anything else with it. We both love reheated slow cooker meals.
