I am going to make potato soup today and it calls for a can of evaporated milk. Mine says best by Jan 15, 2023. Would you use it?
I can always just use half and half. I have a back-up plan.

I would open it and see what it looks like. If it looks fine, use it.

I’d use that. Unless the can was rusty, bulging or otherwise showed signs of damage that could affect the contents.
