Ham on homemade biscuits. This was breakfast this morning.
Ham with a big pot of Northern (white) beans with a side of mashed potatoes and cornbread.
Tonight, we are having sliced ham with sides of sweet potatoes and some homemade bread.

Red Beans and Rice is always my go-to for leftover ham. Ham and scalloped potatoes are another good option.

I'm making an egg bake with ham for dinner tonight. I always freeze leftover ham to use later on.

Leftover ham is the best. Use it in sandwiches, salads, soups, eggs Benedict, scrambled eggs, casseroles, pretty much anything. My go-to is split pea soup (especially if I have the bone to use for making stock). I’ve used it in stir-fried rice, too, but it’s not very authentic. You can toss it in with blue-box mac n cheese. Pan-fry a slice and serve with fried eggs on the side.

"Delicious Ham and Potato soup" on allrecipes is fantastic. You can make omelets, ham sandwiches, if you have the ham bone, you can make a ham and bean soup.

I make ham for one person on Thanksgiving, and always have tons of leftovers. I freeze it in portions to use for soups. Our favorite soups with ham are corn chowder, and bean & ham. Also ham & potato, and smaller portions for breakfast casseroles.

Split pea soup is my go-to for leftover ham. I freeze the bone with some meat still on it, then freeze any other meat separately. Depending on how much meat is left on the bone I might take some of the other ham out of the freezer for the soup. We use the rest of the meat for lunches or whatever.

Cut into bite-sized chunks and add it to tabouli with tomatoes (use halved cherry tomatoes or cubed standard) for an easy dinner. Great in the summer. I'm posting a recipe for tabouli (a wheat salad popular in the Middle East and Mediterranean), but our grocery store sells it boxed in the International aisle. www.themediterraneandish.com/tabouli-salad/

Also ham & potato, and smaller portions for breakfast casseroles. You can buy 1 pound of sliced ham at Honeybaked, you just have to order it in advance - when I went to pick mine up they had signs on the door that there was no sliced ham or turkey and they werent doing sandwiches that day. (I preordered my sliced ham so it was fine)

We love this baked Denver omelet from All Recipes.
2 tablespoons butter 1/2 onion, chopped 1/2 green bell pepper, chopped 1 cup chopped cooked ham 8 eggs 1/4 cup milk 1/2 cup shredded Cheddar cheese salt and ground black pepper to taste 1. Preheat oven to 400 degrees F (200 degrees C). Grease a 10-inch round baking dish. 2. Melt butter in a large skillet over medium heat; cook and stir onion and bell pepper until softened, about 5 minutes. Stir in ham and continue cooking until heated through, 5 minutes more. 3. Beat eggs and milk in a large bowl. Stir in Cheddar cheese and ham mixture; season with salt and black pepper. Pour mixture into prepared baking dish. 4. Bake in preheated oven until eggs are browned and puffy, about 25 minutes. Serve warm.

I make ham salad for sandwiches from leftover ham. Cut into small pieces and mince it in my small chopper, transfer to a bowl and add green onions and celery cut up small, add a bit of mayo, a bit of dill relish, celery salt and black pepper and mix well. This makes a great toasted sandwich and keeps well for 2-3 days in the fridge.
I also like the ideas of using cut up ham in omelets and in quiches.

I don’t have access to my recipe right now (haven’t unpacked the boxes yet!) but I make a ham/pineapple/rice casserole. If that combo interests you you could do a search.

Freezing ham sucks out the moisture and leaves behind a whole lot of salt, so I wouldn't do that!

I dice it and freeze in 1 or 2 cup portions. I use it for breakfast sliders, in scrambled eggs, or in scalloped potatoes.
