I'm a pepper fan, so I like Chile Relleno Casserole. You can Goggle and get variations of the casserole, but this on is really good. Chile Relleno Casserole

I made this biscuit egg casserole for Thanksgiving morning and spent the rest of the week eating leftovers Breakfast Casserole from Lil LunaIf you like peppers I think that would work great in place of sausage -- or even broccoli would be nice imo!

Not really a casserole but I like a baked veggie frittata. I put spinach, mushrooms, tomatoes, leeks and goat cheese in mine

I have 2 - both default to sausage, but you could swap out veggies like you said.
First one: 8 Eggs 8 slides of Bread 2 C Milk 1 C Cheese 1 Package sausage (links or ground)
Cut bread into small pieces and layer in 9x13 pan. Wisk together milk and eggs, cover bread. Layer in sausage (if links, cut into small pieces). Salt & Pepper to taste. Cover with cheese. Bake at 350 for 40-45 minutes.
Second one: Biscuit & Gravy Casserole 1 can Biscuits 6 Eggs 1/2 C Milk 1 pkg Sausage (links or ground) 1 C Cheese Country Gravy Mix
Cut biscuits into small pieces. Layer in 13x9 pan. Layer in cooked sausage. Layer in cheese. Wisk together milk and eggs - salt & Pepper to taste. Layer egg/milk mixture into pan. Make the gravy per instructions on packet and layer over the top. Bake 40-45 minutes.

I just made a breakfast casserole/baked fritatta for our Thanksgiving meal (it was breakfast instead of a traditional dinner).
I don't usually follow written recipes for lots of dishes, and this is one.
I lightly sauteed onions and peppers (red & yellow) until soft, but not completely done and spoined into the bottom of a greased 9x13 glass pyrex baking dish.
Then I used kitchen shears to cut fresh spinach and put that all over the peppers and onions.
I blended a dozen eggs with a glug of milk and a smaller glug of heavy cream (maybe 1/2 & 1/4 cup respectively) and a healthy shot of hot sauce. Seasoned with some of my favorite spices and gently poured over the veg so as not to disturb them.
I covered and put into the fridge overnight. Next morning, I got out and let warm anout 45 minutes before baking at 350 until almost set.
I topped with lots of shredded cheeae and continued baking until set and cheese was melted.
I made it veggie for my non-meat eating DD. When she is not home I add some chopped ham to the veg.
Any leftovers can be reheated in the microwave.

I'm having trouble reading all of the info, but the Rice Krispies and rice are intriguing. To clarify, do you measure out 1 cup of rice and then cook and use it all? That's how I interpret what it says. Thanks!

That's how I interpret what it says. Thanks! Hmmm. I made this after someone brought it to a scrapbooking retreat last year and I remember asking that question here. I can’t remember what was decided lol. I think it was one cup before cooking. I just found another similar recipe online and it says two cups cooked.

I take it to mean that you cook the rice and then add it. There isn't any additional liquid in the recipe and 2 cups of uncooked rice would usually require adding at least 4 cups of a liquid. Normally, I'd say that you can add the liquid and cook it longer, but I think the cereal would turn to mush if you did that.

I like a good strata, but usually just wing it and don’t follow a particular recipe. I like the eggs, bread, and veggie mixture.

I cannot in a million years imagine what the taste and texture of this… gourmet dish would be. It is one of the most bizarre combination of ingredients I have ever come across. Sausage with Rice Crispies? Rice Crispies with cream of celery soup? Onions? And a bloody POUND of cheese? This is an abomination! 😂 And yet, there was once a Pea that criticised the food served up in the UK! We have nothing that can touch this! 😄 But hey, each to their own, right? 😉 ETA I was trying to think what else would go with Rice Crispies that wasn’t milk, and the only thing I could think of was melted chocolate. You could try adding that next time too!
