I found this recipe I want to make. I don't like onions, but I know what to do about that. What I am really wondering is... how complicated do you think it would be to make this in the crock pot? What would I have to do differently? TIA.

I think I would add the milk and cheese a little before serving. Maybe 30 min before?
And of course cook the meat.

my mom makes this all the time, but i dont think in the crockpot since it's so quick....

I wouldn't worry about skipping the onions. Can you use garlic, or perhaps leeks to add an extra layer of flavour missing from the absent onion?
It does look like it comes together quickly. You could prep some of it ahead.
It sounds really good. I think I'm going to give it a try.

You guys may be right... the reason I was thinking the crock pot is because I'm in the wheelchair is I thought it would actually be safer. But either way, I'll have to drain the excess oil/fat from the beef. And that actually may be easier from my new dutch oven, which is surprisingly light.

As the paper absorbs the grease, I scoop them out into a bowl until they cool and I can toss them in the trash.

I use 96% lean ground beef for things like this and there’s never any fat to drain.

I tip the pan, scoot the meat to the high side, scoop out the fat with a big spoon and put it into a small glass cup. Then I put a paper towel into the pan to sop up the little that is left.

Why does it call for chicken broth with ground beef? Why not beef broth? I don't love onions, but I don't mind them finally diced and well cooked in something like this. I've made things like this without the onion and it's totally fine. If you used lean enough beef there would be nothing to drain and you could do it in the crockpot.
My trick for draining ground beef is to line a bowl with tin foil into and then drain the grease into it and let it harden up and then just throw the tin foil into the garbage.

I make the loft house recipe. I use ground turkey instead of beef since I have a beef allergy. There is surprisingly very little to no no grease to drain and I usually just skip that step . I do add around a tablespoon of Worcestershire sauce to get some umami flavor that some say beef adds but I just like it. If you like onion flavors but not the added texture, use a small food processor or grater to blend it down finely or just add a few teaspoons of onion powder. If not skip it. Make the recipe as desired but follow the directions and you’ll have a nice soup. We just get regular crouton rather than bother with prepping homemade! Enjoy!

Thank you all for the tips, especially re: draining beef!
I actually think I bought extra lean, so it may not be as big an issue. I have to check when I take it out; I am making this on Sunday to get me through the early part of the week.
