I know lots of us have leftover holiday meats in the freezer at this point. I had some ham, and went looking for a recipe to use it up other than my old standbys. Found this stuffed pepper recipe and it's delicious: www.thespruceeats.com/stuffed-peppers-with-ham-and-rice-3061373I've never made stuffed peppers except with a tomato-based filling, so this was new for us and everyone enjoyed it. (I chose the option of baking the stuffed peppers rather than steaming them.) What recipes do you have for using leftovers of any kind? I have a LOT of leftover smoked brisket in the freezer so I'd love something new to try with that.

Brisket baked potatoes or brisket/potato and egg breakfast burritos is my go-to. And the stuffed peppers recipe I make using hamburger meat or taco meat. So good!

Those sound yummy. We love peppers of any kind too.
I really don't have any earth shattering new recipes, but have diced left over ham and put in potato soup or scrambled eggs; ground it for ham salad; and sliced strips and used it in chicken cordon bleu.

For brisket, lasagna. My dh had one and he loved it!!!
For ham - hash breakfast burritos (eggs, ham, bell pepper, onion, cooked potatoes)
Ham and bean soup.

No ideas for you we just eat the brisket and then freeze leftovers and then just eat it with the regular bbq foods.
I never would have thought to add ham to stuffed peppers and have only had tomato based ones but think we will have to try these as they sound good.

My good old standby for leftover ham is split pea soup. I never buy a ham except at Christmas and Easter so I really only make split pea soup twice a year. haha. I have made it other times and used a ham steak (cut up) for the meat, but it's just not the same without the ham bone cooking along with the peas. I suppose I could buy a ham other times but I don't.

You could use either for soup, sliced for sandwiches, or make fried rice. I’ll be making split pea soup with ham this week.
Make breakfast hash with the brisket.
When I have leftover pot roast and gravy, I make something kind of stroganoff-y with it. Brisket would work for that, too. If you don’t have gravy, you can make some or buy it already made.

Our go to options for leftovers are quesadillas or fried rice. With brisket I think nachos would be awesome.

I found this ham and potato casserole when I was looking for a way to use our leftover Christmas ham. It turned out great. I also love throwing together a soup out of whatever is in the fridge - veggies, chicken, stock, and sometimes cheese.

I make Red Beans and Rice, Scalloped Potatoes, and Split Pea Soup with leftover ham.
For the smoked brisket, I think you could use almost anything for which you would use a smoked beef. Tacos, Nachos, Stroganoff, Chili, a soup, etc.

Enchiladas and quiche are both pretty good for hiding leftovers. And pot pie for chicken or turkey.

I’ve had good luck with google search by typing in the names of a couple of random leftovers followed by the word recipe. I’ve made some really good dishes using that method. It feels like my own version of Chopped!
