I found the Christmas dinner one but I was wondering if a Christmas Eve one was floating around and I just couldn't find it.
We have a VERY low key Christmas Eve with just the kids. We watch Christmas movies all day and have hot cocoa and cookies not too long before the kids go to bed. This year, I have to make some cinnamon rolls on Christmas Eve so I can have them ready for Christmas morning. But I'm looking for something super easy for Christmas Eve dinner. The last few years, we've done either calzones or ham & cheese baked in crescent rolls. I'm looking for something different this year. Any ideas? We do Chinese food for New Year's so that's out. And I'd really rather cook something...just something easy/simple.

We always have pizza. It's our tradition. Sometimes it's delivered, sometimes we make our own. Christmas is easy at our house.

What about individual homemade pizzas? Each person could choose the toppings they want. My kids always love making their own.

We usually do something fish related. One of my favorites is this recipe from Giada. I substitute the spinach for arugula. It is very easy to make and I spend more time waiting for the water to boil for the pasta than anything else. And we usually have caeser salad with it, with homemade dressing. www.foodnetwork.com/recipes/giada-de-laurentiis/whole-wheat-spaghetti-with-lemon-basil-and-salmon-recipe.htmlIngredients 1/2 pound whole-wheat spaghetti pasta 1 clove garlic, minced 2 tablespoons extra-virgin olive oil 1/2 teaspoon salt, plus more for seasoning 1/2 teaspoon freshly ground black pepper, plus more for seasoning 1 tablespoon olive oil 4 (4-ounce) pieces salmon 1/4 cup chopped fresh basil leaves 3 tablespoons capers 1 lemon, zested 2 tablespoons lemon juice 2 cups fresh baby spinach leaves Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and transfer to a large bowl. Add the garlic, extra-virgin olive oil, salt, and pepper. Toss to combine. Meanwhile, warm the olive oil in a medium skillet over medium-high heat. Season the salmon with salt and pepper. Add the fish to the pan and cook until medium-rare, about 2 minutes per side, depending on the thickness of the fish. Remove the salmon from the pan. Add the basil, capers, lemon zest, and lemon juice to the spaghetti mixture and toss to combine. Set out 4 serving plates or shallow bowls. Place 1/2 cup spinach in each bowl. Top with 1/4 of the pasta. Top each mound of pasta with a piece of salmon. Serve immediately.

Our tradition is clam chowder in a bread bowl. Last year & this year I was able to get fresh clams, thanks to some serious clam digging! My kids love it & it's easy enough to make that I don't stress out.

I usually do large baked potatoes with toppings (bacon, broccoli, cheese, sour cream, etc.). We usually go to a holiday light display that night, and with all the food on Christmas day I just want something that isn't super heavy or rich.

We don't have any particular traditional meal for either day. It changes from year to year depending on who's coming on what days. As a "blended family" you have to be flexible with holidays.
This year we are having leg of lamb on Christmas Eve at our house with my four boys, my mama, my husband's aunt & uncle, and his cousin.
Christmas Day is lunch at his dad & step-mom's with my boys & mama and his step-sisters and their families.

Christmas Eve is with my side of family at my mom's. We all just bring appetizers and munch, munch, munch. Always seems to be more than a regular meal though. Everyone seems to bring that one more thing... I enjoy a little bit of more things rather than more of just a couple/few.

My husband cooks dinner on Christmas Eve. He used to make shrimp tortellini bisque but last year I suggested we have something else, and I have no idea what we decided on. I just asked him tonight what he thinks we should have. I honestly don't know. It's just the 4 of us. We eat out at a restaurant for lunch on Christmas Eve. Maybe someone will post something interesting on this thread!

My Christmas Eve dinner is sandwiches. I buy nice rolls, several kinds of deli meat and cheese, deli salads (macaron salad, potato salad, whatever), cut up a couple tomatoes, put mayo and mustard out, etc. Paper plates. That's it. Easy and no cooking for me. I cook the next day so one big meal is enough. Plus, dd, my sister, and I always go to church and I'm not cooking and then trying to rush there.

I forgot to add, in the past, my mom usually did a large pot of chili so people can just eat as they arrive.

I host Christmas Eve every year for my side of the family. We have a kind of eclectic spread of food. Tamales, ham, my Uncle's excellent chili/beans, green salad and whatever else people decide to bring. Sometimes green bean casserole or mashed potatoes. Different breads and mustards to make sandwiches with the ham.

We have our daughter, sil and grandkids here on Christmas Eve. I cook a couple small pork tenderloins in the crockpot(with mushrooms, celery, onions and some red pepper flakes), then make gravy and serve it over good bakery bread and homemade mashed potatoes. It's easy and so yummy. Then of course we have all the extras...veg and dip, cheese and crackers, olives and pickles, punch and for dessert chocolate fondue with fruits.

We started a tradition a few years ago going to a Chinese buffet. Only being able to find Chinese buffets here that serve mostly seafood dishes, we opted to just go to a Chinese restaurant and order dishes we want (i.e. paying for what we will eat, instead of paying more for stuff we won't), and share family style.

I'm cooking here both days so for Christmas Eve this year I decided on doing a bunch of appetizers. It will be my DD, my SIL, my two grandsons, my mother and myself. I let everyone pick their favorite appetizer and then added a couple to fill in.

I grew up with the 7 fishes dinner on Christmas Eve, but since my husband doesn't like that, I usually make manicotti so at least I keep our meal meatless. I make the crepes and assemble it ahead of time, so there isn't much to do that day, brandy327. I also make a salad. These days w/my son working at a restaurant, we eat there when his shift is over. One of these days we'll get back to my manicotti. I miss it.

DH and I used to do steaks and baked potatoes with a salad before we had kids. Now we do hotdog roll-ups (hotdogs slit open with cheese in the slit and then rolled in crescent rolls. We usually have fries or tater tots to go with it and some type of salad or veggie. After dinner we give the kids a present (always a new pair of pjs). They put them on and we go for a light ride. When we come home we have milk and cookies for dessert and they go to bed so we can put out the presents!

Dh's side is from Sweden. Christmas Eve is - is their Christmas. More the dinner, presents, singing. St.Lucia. It's a 7 course meal. It seams like a lot but it's really not. The traditional lutefisk (there's very few of us that eat that LOL!), small potatoes, meats, cheeses, then ham, or turkey or both. Of course Swedish Meatballs. Lots of pickled veggies. Some do the meatballs with the sauce (gravy), some don't depending on who's hosting. The other what's considered 'old tradition' is rolling the butter. There are special wooden paddles that make patterns in the rolls of butters. I've not mastered the skill in the 16yrs we've been married. LOL but they are cool. We looked all over Stockholm and other places in Sweden when were there. It was hard to find and when we spoke a lady in an antique store she told us many don't do it anymore but it's coming back around. If it's all the family together - Santa comes for the kids. Christmas Day is more of a religious holiday for them and they do more family stuff. My family it was Christmas Eve pajamas. The PJ's were the one present we could open on Christmas Eve.

Our Christmas Eve tradition is breakfast for dinner. We go all out, with herbed scrambled eggs, bacon, sausage, biscuits and gravy and assorted fruit spreads. I am excited this year to have Australian / UK style bacon, I think some Americans know it as 'back bacon'. I have missed this it and it will be our treat this Christmas Eve. We also have a fruit platter and yogurt. After dinner we nibble on Christmas cookies while watching the Myer Music Christmas carols.

We always have pasta with shrimp sauce. It's my take on the traditional Italian fish dinners I grew up with. I never liked the traditional fish, like eel and squid and bakala, so when I took over the Christmas Eve cooking, I started doing it my way.

We alternate cmas's. So the yr it's my family we go down to my parents and stay there for a few days. Cmas eve is all appetizers. Which we love. Cmas day is the big dinner. ham or turkey. The other yr is my dh's family. They do a traditional ham or turkey big cmas eve dinner. I tried to get them to do app's one yr, but they don't like change. When we are home and go to my dh's families I usually work that day, so don't have a lot of time to make anything.
