I have a couple questions.
I saw where someone froze lemon slices into ice cubes to add to their water. I kind of like this idea because I like adding lemon slices to my water, but not often enough to use a full lemon. Had anyone ever done this? I would definitely wash the lemon before slicing and freezing.
Next question, I would like to add more beans to my diet. I found some recipes, but it makes a lot more than what I can eat in 2-3 days. What are your favorite ways to add beans to your diet. I am finding when I have beans regularly, I am more regular.
Thanks for any advice or ideas.

As far as freezing lemons in ice, you might just have to try it. My concern would be that the lemons would be extra mushy, but what bothers me wouldnt bother others.
Regarding beans, I hate to say it but they are cheap enough that if I dont need the whole can, I'd just trash what is left. We use black beans for burrito bowls, tacos, enchiladas, taco salad. Dh likes pinto beans and cornbread, and he will go through most of a can of pintos in a couple days (of course he isnt just raw-dogging them out of the can, they are prepared lol). Chili is another way we use beans. You couls also grind the beans as a meat replacement

You could also freeze the lemon slices on a parchment paper covered cookie sheet and then throw them in a bag/container. I like this chickpea salad. There would always be leftovers from the can, so one time I thought I'd try and freeze them. I figured if they were gross when unthawed, either was I was throwing them. Turns out we think they taste fine.

I was imagining you sharing some fun asian ice recipe... Back to you question, I don't freeze peels. I make cubes of lemon juice, some with water, some with pulp. And also cubes with ginger and lemon. Sometimes I use coconut water, or blend with celery too. It depends on the season and mood. It's nice to have a variety stocked in the fridge

I have an ice-cube tray that makes very little ice-cubes. I cut up lemon slices into smaller bits and freeze them in these ice-cubes. Once frozen, I put them in a ziploc pouch so the ice doesn't dry out. I have also frozen lemon halves, where I have squeezed out the juices in a ziploc baggie and added water and froze. I had to place the baggie in a plastic cylinder container so that it would freeze in a shape that would work when put into a larger container.
I also like sliced lime and cucumber slices. Very refreshing. I freeze the lime but not the cucumber.

I like the lemon slice ice cube idea too and I will give it a try.
I have a Mexican soup that I make that uses 5 different kinds of canned beans. It goes together quickly and I change up the ingredients depending on what I have on hand. I find that I like it with ground turkey the best. I usually make a giant pot of it and then bag up individual portions and freeze them. I typically serve it with fresh lime juice, a little grated cheese, a spoon of sour cream and a handful of tortilla chips crushed small. I thaw a serving in the refrigerator the day before and then heat it and add the toppings. It tastes the same as the freshly made soup. It is really filling and I love being able to grab that and skip cooking for the night.

Soy beans (edemame) are a good snack. Lot of stores carry them frozen. You just boil them, salt them, and eat like peanuts. Yes, they are a part of the bean family.

When you put the lemon slices in a ziplock bag, make sure they are freezer ziplock bags not thin sandwich bags. If you fill the bag full of slices, they will get stuck together but they can easily be broken apart. If you are not filling the bag completely, kind of spread them out flat in the bag. It makes it easier to break off a slice. You will get ice crystals forming on the lemons but honestly, it does not effect the taste.

I add beans with my morning scrambled eggs. That’s if I don’t already have a big batch of breakfast bowl in the fridge for a week. (Scrambled egg, cannellini beans, red pepper, mushroom, chopped kale, quinoa)
If you plan on adding more beans to your diet, I highly recommend getting some Beano until your body gets used to them.
