I'm making fried fish sandwiches and roasted asparagus for dinner. I had some walleye I vacuum packed last July when my brother caught it in my freezer. I will bread, shallow fry and serve them on toasted ciabatta bread with romaine and homemade tartar sauce. I picked up the ciabatta at Panera this morning after church and made the tartar sauce yesterday so the flavors had a chance to mingle I picked up the asparagus today because it was on sale and my grandson loves it He and the rest of his family are coming over for dinner. I picked up 5 boxes of Girl Scout Cookies so that's what they're getting for dessert. I've also got ice cream. So, what's on your plate tonight?

Sounds lovely akathy. We had home made lasagne, with a small green salad followed by homemade Victoria sponge. I made two large lasagna so lots for leftovers and freezing

We're spending the afternoon cleaning out the garage, yeah I know, you're all jealous.
For an easy dinner I have bean and barley soup simmering in the crockpot. Dh and boys will have it with crusty bread and I'll sniff the bread and drool

ha ha on the clotted cream. Do you guys make your own? If yes, I need to know how. I posted my so-called recipe on the other thread. I'm headed to the supermarket this afternoon (in part to look for salad cream) and I'll pick up something simple to make for dinner, maybe chicken breasts? I have so many recipes pinned I'd like to try out "one of these days." OR maybe I'll just roll by AKathy's house for fried fish and roasted asparagus! yum.

Pan seared, oven roasted sirloin steak for him, hamburger steak for me (I'm not a steak fan,) topped with carmelized onions, sauteed mushrooms/garlic on the side, and probably asparagus or broccoli. Maybe some peaches for dessert.

ha ha on the clotted cream. Do you guys make your own? If yes, I need to know how. I posted my so-called recipe on the other thread. I don't make my own clotted cream. It's such a long drawn out process to make proper Cornish or Devon type clotted cream that it's easier to buy a tub when needed! However, I've had the following recipe for making authentic clotted cream for forever - just never got round to trying it! HOMEMADE CLOTTED CREAM Ingredients 3 pints milk ½ pint cream Method Mix the milk and cream together and pour into a wide saucepan. Cover to keep out the dust and leave to stand in a cool place (NOT the fridge) for several hours until the cream has risen to the top. Lift the pan carefully onto the stove so that the risen layer of cream is not disturbed or broken up. Warm through on the lowest possible heat, on an asbestos mat if you like. Keep at this low heat for 40-50 mins until the top of the cream is crinkled and golden yellow. Remove the pan from the stove, cover and leave to stand for several hours or overnight in a cool place...but NOT the fridge! Then, using a slotted spoon, skim off the cream into a dish, allowing the milk to drain back into the pan. The milk can be used for pancakes or scones.

I am trying a recipe for baked tacos. I made my taco meat and have it in the crockpot. I've never done that before but I read about it on Pinterest. Fingers crossed it will be good. I'm also going to try making my own crispy corn and flour tortillas in the oven. This meal will either be really good or it will really be terrible. Lol.

We are having tamale pie. Vegetarian for me and Vegan for dd. It's lentil based with spices, corn and some black beans. Mine will have extra sharp cheddar topped with cornbread batter. DD will be topped with veggie cheese shreds and cornbread batter.
I don't care for the fake cheese and I prefer the quick breads made with eggs.
When I eat I will put a bit of sour cream on the top.
ETA: Since the oven is on today I am making seasoned roasted chick peas for snacking over the next couple of days.

I am using my brand new pea-enabled panini press. Ds and I will have reubens and dh will have roast beef and Swiss with caramelized onions and roasted red peppers (from a jar) with horseradish cream that I made. I will make some (ore Ida) fries to go with. I've also made sloppy Joes that we will have tomorrow (ds has to eat pretty soon after I get home from work, so I needed to make them today and reheat tomorrow). The recipe makes more than we need so i will freeze half for another day.

This recipe looks marginally easier than the one in the other thread, but they both scare me. I'll save the recipe anyway, in case I ever get brave enough to try it. Meanwile, I'm off to make scones, because the other thread got me all worked up.

akathy you had me up to the tartar sauce...I am a cocktail sauce kind of girl. Tartar not so much. I think I am going to have bbq (sauce) chicken sandwich and tater tots. The boy is at his dad's, and it is me alone and I am not feeling like cooking a whole lot.
