Can I substitute sour cream for heavy cream in a pasta sauce? Not a fancy recipe, just quick one skillet kind of thing.

I would use a soft-type cream cheese, the spreadable kind, as the sour cream is dense and milk is liquid. The soft cream cheese will be the right consistency and will give the slight flavour that sour cream gives. Yogurt could also be used as it is a bit dense and has a tangy flavour.

I wouldn't use yogurt for fear it would separate in the dish.
I would use milk and maybe add a pinch or two of cornstarch to give it some added thickness and keep the sauce from breaking.
Cream cheese would work too.

In place of heavy cream mix 1/3 cup melted butter with 3/4 cup milk.

sour cream and yoghurt will both give the dish a tang that is not characteristic of creamy pasta dishes. So I would not substitute using them. It will change the flavor of the dish considerably. I'd add a bit of cornstarch to milk to use.

If you are making an alfredo type sauce, you need the cream-but you can substitute any kind of milk. The lower the fat content you use, the lower the creamy taste will be though. I generally use half and half, heavy cream is almost too rich to me. But, I make alfredo all the time and have made it with 2% milk before. I do exactly what others have suggested and added in some cream cheese to give it a richer flavor. What are you making?

What's the recipe? Could you share it with us please? I used a Mcormick spice packet for chicken penne. Recipe on the back. 1 lb chicken 2 T butter 1 can diced tomatoes 1 c heavy cream 1/2 c Parmesan cheese 2 cups pasta (cooked as directed) brown chicken in butter, add other ingredients and bring to a boil while stirring. Cook 5 min. Mix with pasta ans serve. It it was so easy and good. I also recommend their seasoning packet for bourbon spiced pork.

I would use - and have used - sour cream or cream cheese spread or Greek yoghurt or milk (maybe with a bit of cornstarch to thicken) as a substitute for cream in the past. with the recipe you posted I would definitely use sour cream.

I always use fat free half and half to replace cream. It is thicker and creamier than milk, but no fat.

I've used evaporated milk for a substitute and it turned out well. I usually try to keep a can or two in the pantry for such things.
