We went to Costco today ... on a Saturday - what were we thinking Anyway, we bought a bunch of stuff but I am not in the mood to cook tonight AT ALL so I'm hoping that dh will agree to grabbing takeout tonight ... burritos maybe Dd#2 is still at Grandma's and I know that dd#1 will be happy if we swing by and pick up chicken strips from Wendy's for her ... What's cookin' at your house?

I decided to wait until today to boil/debone my chicken so that I could use the broth to make chicken and dumplings for tonight. So I have the chicken deboned and I am getting ready to make the dumplings...and I am making enough for me tonight and dinner for the boy and I tomorrow night. I am trying to decide though if I want to be lazy mom and use bisquick or just go ahead and make the dumplings from scratch. Scratch ones don't really take more time and they do tend to taste better...okay, maybe I talked myself into just making the silly things. It is the rolling out part that I get tired of.

Not quite sure yet..I had a late lunch with a girlfriend and my dad wants to get together this evening and I'm not sure if he will want to do dinner or not.
If he does, we will probably do Cracker Barrel, if not, I'll defrost a breakfast sandwich and eat it on the way out the door.

I am making pumpkin black bean soup. It's ugly to look at but super-delicious to eat. I still have a pile of pumpkins in my garage from last fall because I didn't make stuffed pumpkin as often as I meant to this winter. Also some of those leftover little dinner rolls from Trader Joe's. Also I baked cookies from a refrigerator roll of sugar cookie dough that was left from, get this, Christmas. I had bought it planning to decorate cookies with the (then) 5yo but he went off to his mom's before we got around to it. I just found it buried in the fridge and it was, let us say, well past the Use By date. However, it still looked, smelled, and tasted fine, and the finished cookies taste great.

DH & I have a memorial service to go to from 5-8 and they are serving appetizers, so that might be dinner for us. It has been a brutal week for his office as one of the young guys that works for him was killed in a car accident last Saturday night. The kids will fend for themselves which usually means tortellini and pesto sauce. ETA I made your monkey bars lucyg, so the kids will be eating that too.

My oldest son isn't feeling well and got sick after lunch so most likely he will end up with banana, toast and applesauce if he feels up to it. Youngest will most likely get the same since it's easier that way.

Just an update...I, generally, make a kick ass chicken and dumplings. But tonight? My dumplings dissolved, my sauce didn't thicken and over all, it might as well be some kind of soup. The taste is fine, but the it is SO totally not chicken and dumplings and isn't a happy accident. Right now, I am trying to thicken up the broth, so wish me luck. I share this story for those who think that people who cook a lot know what they are doing. No, we get cocky and think that we are above making mistakes and the next thing you know you have something that resembles a soupy mess of dissolved dumplings and chicken.

We are having pork chops smothered in blue cheese gravy over buttered noodles, sauteed onions and mushrooms with either steamed broccoli or roasted asparagus. Need to make a decision pretty soon.

I did a slow cooker concoction with chicken, tomatoes, red wine and stock, garlic, onions, tarragon and a smidge of brown sugar. It was very tasty and I'll be doing it again I think!

I have no idea. My brother and I are still in Rochester, MN. We went shopping this morning (bless his heart for taking me) and then had a late lunch. When we came back we each went off to our rooms and haven't spoken since. If he doesn't feel like going out later I have country fried steak in the fridge left from last night.

JoP - nothing like a great onion gravy - do you have a favourite recipe? garThe recipe is my husbands nana's - fry the onions in olive oil and add a tablespoon of water just as they turn straw coloured and turn the heat up so the onions soften and the water evaporates and they start to caramelise, then add the flour and some salt and pepper. I then slowly add some chicken stock, stirring until the gravy is the consistency wanted I then add gravy browning to get a nice colour. I sometimes add whatever chopped fresh herbs I have on hand or a splash of Worcestershire sauce to change things a bit.
