I have a coffee event with my ladies meetup.com group this afternoon so I thought I'd post this before I leave Tonight I'm cooking something everyone in the family likes ... that hardly ever happens So we're having spaghetti with a red sauce made with fresh local (Spolumbo's) spicy Italian sausages ... soooooo good What's cookin' at your house?

No clue. We have a baseball game for oldest ds and a practice for youngest. We'll be home late and there'll be a couple of whiny/cranky/starving kids. I think I might pull a beef enchilada casserole out of the freezer. It will either be that or shrimp tacos. Although, I forgot to pull shrimp from the freezer to defrost before I left for work....guess it will be the casserole

This is Choir night meaning it is usually take out after we are done. Normally from our fave Mexican spot. BUT dinner tonight is Baked Ham and white beans. DH loves that. So he may be getting church take out and DS and I will figure something out.

It has been cold here in chicago, this morning it was 38 with some light snow - ughhh! I decided we needed comfort food so last night I took out a pot roast, put it in the crock pot this morning with potatos and carrots.

Its cool and overcast here (thanks to the Orange Show Fair starting this week) so I am fixing kielbasa in a tomato beef broth sauce with onions and bell peppers. On the side will be baked potatoes and fruit.
OK so as a side note, every year it always rains when the Orange Show starts. Doesn't matter what month...June, May, April. It rains. Supposedly the Orange Show facilities are built on ancient Indian burrial grounds.
Can't complain, we need the rain!!!

We have a bit of gardening maintenance to do this evening, thanks to the crazy storms we had this past weekend, so I am going to make a simple dinner of Greek frittata and roasted potatoes.

Another baseball game tonight. I was planning on making chicken for chicken tacos last night to have tonight, but I forgot to pull the chicken out to thaw. If they game doesn't run too long, I will still be able to get those on the table in a reasonable amount of time. If the game goes a long time, then I don't know!

Crockpot Chicken Tacos... throw some chicken breasts, salsa and taco seasoning into the crockpot all day... then about an hour before serving, shred that chicken and add a brick of cream cheese. Serve on tortilla shells, with all the normal taco fixings. DH & his coworkers love when I make this, because they get all of the leftovers the following day!

DH invited someone for dinner as he claims I make enough for more than 2 and the youngish-newlywed guy is alone since his wife is out of town on business. But I don't feel like it, and now I have to come up with something that's good, easy and not spicy. People here don't like spicy. DH & I love spicy. I told him we're getting takeout pizza, but I guess he thinks I was kidding as he later asked what I had in mind to make. So if I don't order pizza (they make one called the Especiallismo which is a bit different than usual pizzas and has shrimp on it), maybe I'll make shrimp with coconut curry rice, salad and vino. Is curry considered hot? I mean, if it's not labeled as 'hot'? Gah.

I started beef stew around noon and it's been cooking right along. I cook it low and slow and then thicken it a bit at the end. I also made homemade greek yogurt biscuits to go with it. All I have left to do is make mashed potatoes.

okay this has my curiosity picqued because sometimes I just spread a bacon or ranch mayo on Bibb lettuce with some deli turkey, roll it up and eat a lettuce sandwich. dh scrunches his nose but I like lettuce sandwiches.
Do you just spread it on raw cabbage and eat it?

No. I sauté it with garlic and other seasoning just to get rid of some of the crunch. Just for a couple mins as I love my veggies warm but still crispy then I just douse it in sriracha sauce. Heart burn city.

Went to Costco today, so we're having their flautas. I don't remember which Pea recommended them, but they're a favorite w/me & my younger son.
Slight hijack . . . I can't decide if I'm a little jealous or a lot relieved: this is the first year in more than a decade that our menu is not controlled by baseball games, lol.

A new recipe for us -- baked honey mustard/rosemary chicken thighs, mashed potatoes, and limas. DH picked up a surprise something for dessert.
