I want to try a recipe I saw but need a substitute for corn. DH hates corn and even though I like it, it makes my stomach hurt when I eat it. So here's the recipe. Tell me what you think would be good in it.
4 chicken breasts 1 packet of Fiesta Ranch mix (in the salad dressing aisle) 1 can of black beans 1 can of rotel 1 block of cream cheese 1 can of corn undrained
Cook in crock pot for 4 hours. Serve over rice or on tortillas.

I would just leave the corn out and not substitute, but maybe use more beans.

I think you can leave out the corn without a subsitute, but if you want to add a vegetable I would dice red & green bell peppers and add them near the end of your cooking time so they stay crisp.

You could saute some diced onion and red and green bell peppers to add to the crockpot close to the end. I prefer the coloured peppers because they have twice as many vitamins as the unripe green ones.
My aunt makes a salsa chicken that is baked and has monterey jack cheese on top. A mix of gooey Mexican cheeses and monterey jack would be delicious.
I'd want to eat this chicken on corn tortilla chips.

Omit the corn but I would add a little chicken broth since the recipe did specify that the corn be undrained.

you need something with equal bulk as an entire can of corn....or it's going to be significantly more runny than intended

We offered it when she was little even though my DH doesn't like it because we wanted her to taste a wide variety of things. But she never like the taste from the first time we gave it to her. She won't be eating this though because she allergic to milk so she can't have it.

I make a very similar recipe often (it doesn't include the seasoning packet and uses salsa instead of rotel). I think you can leave the corn out without issues. I would add more beans though, or peppers like others suggested. I always add diced green chilies to mine as well.

I make this ALL THE TIME in the crock pot. I never put the corn in . Make sure you drain and rinse the beans. I use a jar of salsa instead of Rotel. And half a packet of the powdered taco seasoning. oh and no cream cheese.

We did a Chicken recipe that was good the other night it was Chicken, onions and cheese with enchilada sauce (Which I don't like so I did a pan of it with slasa. It was good but the next time we do it I want to add something to it like beans or rice. or beans and rice. I did add sauteed bell peppers to this dish. I would do mine large size next time for I love Bell peppers. I would also do larger size onions in mine. I think the cream cheese would add some creaminess to the sauce.
Your recipe sounds really nummy. I would add the bell peppers but My family will only eat them if they are diced very small and sauteed first. They have to be very soft. It's a texture thing with them. You could use kidney beans or pinto beans. I love black beans.

I make something sort of, kind of similar (no cream cheese and different spices) and over the years have left out the corn and it is fine without it. I like to saute peppers, onions and carrots (chopped) to add in as well. I will also have yellow rice on the side and serve with tortillas. A little cheese sprinkled on in the wrap and life is very good. These kinds of recipes are incredibly forgiving and you can add, subtract and substitute ingredients fairly easily. ETA: my biggest change to the recipe is that this is one that I do not include the chicken-this is one of my vegetarian meals.

Carrot? It has a similar sweetness, crunch and color. You could shred it or dice it.

I would just leave out the corn. I don't even know if I'd add any liquid to make up for the fluid in the undrained corn. If you want to add something, maybe go for 1/4 cup water. Definitely don't add rice or quinoa. They will absorb any liquid you add and your recipe won't cook right.

Just so you know, this thread inspired me to make red quinoa taco salad for lunch. Red quinoa, black beans, onion, red bell pepper, diced chiles sauteed with some chili powder, cumin, and garlic. Served on baby greens with spicy ranch, salsa, diced avocado, and chopped tomato. So good.
