The first time I made it, my family complained that there wasn't enough cabbage! Tonight I made it again with TWO whole heads of cabbage and there are no leftovers. And we are only a family of four that also had pot roast with veggies that I made in the slow cooker and mashed potatoes. They kept asking for cabbage! I sprinkle it with caraway seeds which makes it divine! Only downside is the amount of gas in the house. , as even the dog loved it - she is a true omnivore and begs veggies and fruit. so, thanks to whoever posted about it! I'm always happy when I get green veggies ds1 will eat.

So you slice the cabbage into circles--do you core it? What do you put on it before you roast it?
I only cook cabbage when I make corned beef, which only happens a couple of times per year. Usually I quarter it and boil it, but this year I found a recipe for simmered cabbage. I chopped it, and then simmered it in a little chicken broth in a skillet on the stove top. It was so much better than just boiling it. Even my dd's boyfriend ate it, when previously he would never touch cabbage.

Here it is. I find that I need to roast them for an hour to get lots of crispy bits. I'm also liberal with the caraway seeds. If you eat it with corned beef, it gives you the hint of rye bread with the caraway.
Roasted Cabbage Wedges Vegetable makes 6 ∙ source Marthastewart.com INGREDIENTS
1 tablespoon plus 2 more tablespoons extra-virgin olive oil 1 medium head green cabbage, cut into 1-inch-thick rounds Coarse salt and ground pepper 1 teaspoon caraway or fennel seeds
DIRECTIONS
1. Preheat oven to 400 degrees. Brush a rimmed baking sheet with 1 tablespoon extra-virgin olive oil. Place 1 medium head green cabbage, cut into 1-inch-thick rounds, in a single layer on sheet and brush with 2 tablespoons oil. Season with coarse salt and ground pepper and sprinkle with 1 teaspoon caraway or fennel seeds. Roast until cabbage is tender and edges are golden, 40 to 45 minutes. For me this is 60 minutes.

That looks DELICIOUS, Elaine. Thanks for reposting this. I'm going to try it. It is also insanely easy with only a few ingredients and tastes really good. It complements a wide variety of foods and is relatively healthy, just some olive oil and seasonings. Younjust need to to remember to get it in the oven an hour before dinner time and I am not always great and juggling the timing on side dishes. At least with corned beef and roast beef, the main course is just sitting there in the crock pot getting more tender. But I think it would be equally good with chicken and fish.

I've been roasting other vegetables like this: brussel sprouts, cauliflower and broccoli, but not cabbage.

Cabbage falls apart bit, of course, so you couldn't just do on a naked grill as pieces would fall through the grate as you tried to remove it.

He might even it if it is grilled, lol. ~Susan~ When I was growing up and we would go camping we would alway take a head of cabbage with us. Cut it in quarters and add a little butter in between leaves here and there and salt & pepper it. Wrap it in foil. Let it cook for a while and eat it. It was one of my favorite things. I still do this on the grill 40+ years later but now just drizzle with olive oil. Thick wedges also work on the grill if you leave the core intact and really oil the grill. The hamburger cage-type grill thingies will keep them together too. We love roasted cabbage too! ETA: with this post I'm finally a Full Member!

Glad you loved it! We grill it all the time, we've done a sriracha honey brushed on and my kids love it with roasted garlic seasoning too. We have it usually once a week or so, it's just good!
