I was lucky enough to pick up four fresh trout to cook for the family tonight. I usually make a breadcrumb crushed pecan coating and pan fry it, but was looking for ideas that I haven't tried yet.
Anyone have a good trout recipe that I should try? I love trout, so don't want to mask the flavor too much. Any suggestions would be welcome.

DH coats it in yellow corn meal and cooks it in butter. Preferably in a cast iron frying pan, over a campfire.

My recipe of choice also involves lightly crushed nuts with breadcrumbs and garlic, pan fried in olive oil. So I'm of no use to you! Sometimes I just microwave it with a dab of butter and some lemon juice, and serve it with a green salad.

Well, it seems we have similar ideas. Great minds! Jo, when you grill it, do you season it with anything? Stuff it with anything? I have fresh lemon thyme growing in my herb container, so may try to work that in.
