We are having friends for a BBQ tonight and I thought about making an Asian noodle salad. Any good recipes out there? Thanks!

I posted this one on the "favorite summer salad recipe" thread on 2Peas back in May.
Killer Noodle Salad
15 oz Yakisoba noodles (rice noodles) 1-1/2 tsp sesame oil 1/3 cup rice vinegar juice & grated peel of one lime 1/2 cup soy sauce 1 tsp crushed red pepper flakes 2 tbsp sugar 2 cloves minced garlic 1 cup grated carrot 1/2 cup chopped cilantro 3/4 cup dry roasted peanuts
Mix and refrigerate for at least 2 hours before serving.
This is one of my all time favorite salads. Don't be afraid of the amount of cilantro and red pepper flakes in it... it's meant to be a "killer" salad, but I don't find it overly hot.

Here's my recipe; we call it "Dead People Salad" because I brought it for the funeral luncheons at my church!
1 package beef or chicken ramen noodles 16 oz. package coleslaw mix 1/4 cup sliced almonds 1/4 cup sunflower seeds 3 green onions, sliced
Break noodles and combine in salad bowl with above ingredients. Whisk dressing ingredients together and toss with salad about 15 minutes before serving.
Dressing:
1/2 cup vegetable or canola oil 1/3 cup cider vinegar 1/4 cup sugar ramen seasoning packet

I've seen this kind of recipe before, but I've never tried one. Do the noodles soften up as they sit in the dressing? Or do they stay crunchy? I don't think I'd want hard uncooked noodles in my salad...

I prefer to wait till time to serve to put the dressing on. The crunchiness is what I like about this salad.

here is mine, its similar to Cheesy's
1 package ramen noodles 16 oz. package coleslaw mix ( I also add a small bag of broccoli slaw) 1/4 cup sliced almonds 1/2 cup sunflower seeds 3 green onions, sliced 2 Tbl butter
Break noodles and combine with sesame seeds and almonds, toast in a pan with butter till golden. I also add a few dashes of garlic powder to this. Let cool then add to the slaw mix
Dressing:
1/2 cup vegetable or canola oil 1/3 cup cider vinegar 1/4 cup sugar 1/4c soy sauce Combine in a pan and bring to a boil for 1 min then let cool completly. When cool toss with the slaw mix and serve!
