I just put up 7 quarts of Garlic Dill Pickles and 9 quarts of bread and butter pickles this weekend. Since it was my first pickle venture, I've only canned preserves before, I stuck with Mrs. Wages mixes.
I will probably pickle some jalapeños this summer and may try a pickled green tomato recipe at the end of summer when it is time to pick everything left on the vines.
What are you canning this summer? Any recipes you want to share?

I made Mtn Dew jelly this weekend for my son in law's birthday this week, just for fun. He loves Mtn Dew not sure if anyone will eat it though, taste lemony.

Nothing yet...I still have quite a few jars of tomatoes from last year, and TONS of jelly and jam. Too early for corn here. I probably should start looking for peaches though. I need to get busy and do more baked beans and we are down to one jar of potatoes. I prefer to do those in the winter, but we've been out of baked beans for months.

I first got into canning when I lived in Oregon and could get flats of blackberries so cheaply! Not here on the east coast. So far, I've done dilly beans and raspberry jam. If I knew I was going to get back into canning this year, I would have put out some Roma tomato plants, but I only have cherries and eating sliced varieties.

I made some jam a couple of weeks ago: vanilla peach, strawberry basil, pineapple jalapeño, blueberry lime, and strawberry balsamic black pepper.

elaine, What is cheap to you re: blackberry flats? Just curious, as berry prices seem to have gone up a lot in the last few years. Yet, I have no idea what they cost elsewhere.

I want to can chicken breast, but I don't have a pressure canner. And I am scare of a pressure canner. My mother would not let anybody in the kitchen when she was using one.
I need to do about 3 dozen pints of chicken to have enought for son and husband. I would like can salmon too, there is always the Native Americans selling at the river.

I went to the farmer's market at bought a large bag of peaches. It's peak season here! I'm giving them a day or so to soften a bit and then I'm doing a freezer peach jam. I'm already looking forward to some peach jam on those cold & dark December mornings.

Probably not much as I'm really short on time this summer (dang wedding season)....
But I'm growing some hot peppers for DH, I bought a trio of plants at the garden centre - jalapeno, cayenne & habanero, two of each kind. And if he doesn't eat them all at once (ha ha) I will do my best to make some pepper jelly, or pickle some for him, or dry the cayenne for the seeds. We'll see!

We have fruit trees and bushes in our yard - I only can what we grow, it is bad enough buying jars, sugar and sure jell. I do not like pressure cookers either although the new ones look safer than previous models.

9 quarts of pickled beets 21 quarts of tomatoes 46 1/2 pint jars of salsa 12 quarts green beans 18 pints pickle relish.
I picked another bushel and a half of tomatoes Saturday! I think these will be spaghetti sauce.

I am still using what I canned last season, so I kept the garden light this year. It's been really strange weather, too, so whatever I do end up with, I probably won't be doing until September (assuming it doesn't freeze first). I did make a half gallon of fridge pickles this weekend, and dd made some strawberry jam a few weeks back. Blackberries are coming soon, so we'll probably do some jam & syrup. I'd probably love them! Taco pickles are the pickled vegetables that you get at taco trucks and stands. Slice radishes, carrots, red onion, jalapeño. Put in jars with a bunch of cilantro. Boil vinegar, sugar, and salt and pour over vegetables. I found the recipe on Pinterest. This time I added blanched cauliflower and green beans. When the veggies run out, you can just add more crunchies to the vinegar in the bottom of the jar.

We were gifted a deep freeze this spring so I'm doing freezer jams, freezing tomato sauce, fresh corn off the cob and freezing lots of fresh berries. I wish I had space to store canned food.

So far I've only made some strawberry freezer jam. I've never officially "canned" anything (officially meaning using the water bath and making sure that the lid popper thing happens). I'm growing tomatoes & peppers this year so hopefully I can make enough fresh salsa and attempt canning. Might try some blueberry jam when the blueberries are in season.

I couldn't seem to get them ripe enough before frost would hit. Our growing season is very short. I grew them in our front yard. I don't dare grow anything in the backyard because of my son. He all ready killed a very small apple tree. I like it to be his place to run free. I also live near farms. One day driving by one, I had an epiphany! Why am I trying to grow vegetables when I'm happy with the prices of the produce the farmers are selling? I should see if I can find the picture I took of one of my tomatoes. Some rodent got to it, and I kid you not, it looked like the tomato was laughing at me!

Love this thread--I'm jealous because I just can't seem to grow anything in enough quantities here in this yard to bother with canning, other than tomatoes, and I skipped that this year. My herb garden is amazing, though, so there will at least be pesto, and the volunteer tomatoes I let live actually (miracle of miracles) have tons of fruit! Not enough plants for canning, but definitely enough for bruschetta

Now you are bringing back memories for me. My mom and grandma used to can bread and butter pickles every year. I used to love them. And those garlic dill pickles sound nummy.
I am not canner but if I was I would do pears. My grandma used to do pears in light juice and they were so nummy. I used to always love going to her house for lunch because she would always pull out her pears.
My mom used to can everything. jams, jellies, fruit, veggies, you name it it went into a jar. We had a large garden and us kids would help her plant it and we would water and weed it and help pick stuff then she would can it. We help prep all the fruits and veggies. We had enough for all winter. It saved big time on the grocery bill.

When I lived in Oregon, about 18 years ago now(!), a flat of berries was about $8. A flat was about 8 pints worth. Around here it is more like $8 a quart.
