erm. I have a feeling it may be fast food. We start back to tae kwan do tonight and I haven't started anything yet. I did defrost some frozen leftover turkey chunks so maybe I'll do something quick with that. This is hard, this cooking dinner every night business.

Steak, baked potatoes, asparagus and cucumber/tomato salad. With blueberry scones and homemade blueberry syrup for dessert. Usually we don't get that extravagant for a Monday night, but DH and I both happened to have the day off, so we're making the most of it.

We're having Tyler Florence's recipe for pot roast, mashed potatoes, steamed broccoli, peach slices, rolls and for dessert I have personal size pies I found in the bakery section of the grocery store. I make UGLY pies, so I leave the pie making to the professionals. seaexplore, what are ginger ale carrots? www.foodnetwork.com/recipes/alton-brown/glazed-carrots-recipe.htmlI leave out the chili tho. Not a fan of spicy food and Alton Brown tends to over spice everything! He puts chili powder in corn dog batter!

Thanks for the recipe! It sounded like something my family would like and after seeing it, I was right. If it were up to me, I'd leave out the chili powder too, but my family likes spicy foods, so I will add it. You're very welcome. Maybe leave out the chili powder and put some red pepper flakes on the table for them to add? You could maybe add less chili powder? Heck, you might like it since it's not supposed to be too spicy. I don't know. I do know that I won't touch it if it's got chili powder in it at all. I'm SUPER picky!

I have to clean out the freezer by tomorrow night when DH comes home with 8 salmon and 2 halibut!!!!! (yes, I am thrilled to be filling my freezer with fish)
For tonight I pulled meatballs and sub buns out of the freezer and will make up a veggie plate with cucumbers, peppers and carrots.

Steak and green beans were done on the grill. We seem to have this about once a week. Quick and easy.

Ham Off the Bone sliced from HEB deli. Tastes just like leftover baked ham. Making sandwiches and cut up fresh cucumbers from my garden tossed with ranch dressing and dill weed. My neighbor is coming over and bringing a peach pie - score !

I was going to make chicken in mushroom gravy with pasta and a side of broccoli. I ended up eating 3 slices of deli ham, cool ranch doritos, and an orange...haha.

My parents are coming over tonight and I have pulled pork in the crockpot and I picked up some corn on the cob and slaw yesterday at the grocery store. I also made some brownies. I'm in awe! The first meal I served after my baby came home was a hot dog and ruffles. You rock. Is the baby sleeping?

Salmon and rice pilaf. DD2 is home from her summer research position. She is a vegetarian so meal planning is challenging as far as finding something all 4 of us will eat.

Mmmmmmm, total comfort food.
For us it's honey sriracha tofu, steamed rice and possibly bok choy and snap peas (grocery shopping after work, so it really depends on what veggies look the best once I'm there).
How do you make the honey sriracha sauce? Sounds like something I would love with just veggies or chicken. This is the recipe I used (you could easily substitute chicken for the tofu): www.pickledplum.com/house-foods-honey-sriracha-tofu/I didn't measure anything, just dumped and tasted. I made a larger batch and cooked the tofu with the veggies. It was really good, I think you'll enjoy it

My boss invited my dd and I to her campsite for the evening. She and her dh bought a brand new travel trailer this spring, and are spending a lot of time in state parks. I've never camped, but if I would, that's the way to go.
Anyway, supper was steak and baked potatoes on the grill, fresh fruit, pasta salad and s'mores.

Honestly, I didn't feel like cooking it but it made me feel more normal and less like a zombie to be able to make a nice meal for my family. Baby isn't really sleeping more than two hours at a time..I getting about 5-6 hours of sleep a day which is enough to keep me functioning.
