Thanks for the recipes ScrappyLin - both sound delicious and I'm going to try them at the end of this week....and will also try the chicken. Now looking forward to you contributing to the 'What's For Dinner' threads each day to see what you come up with for other times! You're welcome, Barbara. I hope you like them. I know that I need to read more of those threads to get ideas. My tomato plants are out of control so I need more ideas of how to use them up.

I hope his colonoscopy was as "non-eventful" as any colonoscopy can be. It was very non-eventful! My 61 year old husband has the colon of a 20 year old.

I am one of the lurkers on here. Don't have much to say since I'm not very interesting. But today I am happy my 19 year old grandson is home after a 5 week training class for his work. He is back just in time to start his junior year at college.

I'm trying (think I'm at 8 or 9)! I'm an intermittent poster/lurker but I've made an extra effort this week (also I've had lots of time as we're on holiday!). I've even posted a pic in the "care to share a photo" thread I've just started using the tapatalk app as I usually browse/post from my phone & I really love how easy it makes everything.

The salsa is very easy (taken from a Southern Living magazine years ago): Salsa 4-5 plum tomatoes, quartered and seeded (I rarely quarter them but will cut in half.) 2 garlic cloves chopped (I just throw it in the food processor whole) 1 sm jalapeno, seeded and sliced (I just throw in the two halves after seeding it.) 3 Tbsp. lime juice 1/2 tsp. salt (I use coarse.) 1/2 tsp. pepper 1/4 c. fresh cilantro Throw everything in a food processor and blend until smooth. The salsa was originally intended to be served with Flank Steak Fajitas which are a signature dish that I serve. Everyone always asks for that recipe so I will include it. Southwest Flank Steak with Salsa Makes 4-6 Servings 2 TBSP fajita seasoning (I use Emeril's Southwest.) 1/2 tsp. dry mustard 1 tsp. pepper 2 TBSP olive oil Combine the first 3 ingredients. Rub olive oil evenly over flank steak; sprinkle with seasoning blend. Cover and chill at least 4 hours. Grill covered with grill lid, over medium-high heat (350-400 degrees) 7-8 minutes on each side or to the desired degree of doneness. Cut steak diagonally across the grain into thin strips. Serve with salsa. For the chicken, I just sprinkled the breasts with a little Montreal Chicken seasoning, topped with salsa and cheese and baked in the oven. My kids love it. We LOVE salsa in our house and have yet to find the perfect recipe. Thanks for sharing. (may even try doing the chicken too) @gajenny I made the salsa last week for a neighbor to thank the family for watering our flowers. They called after dinner and asked me to make some more (joking). My husband had just harvested a bunch more tomatoes, which I had hoped to use to make spaghetti sauce over the weekend but due to a funeral for a cousin I wasn't going to have time. So, I whipped up another two batches of salsa--one for them and one to take to funeral festivities. I hope you enjoyed it if you made it.
