My Mom went home this morning so it's just me tonight. I picked up some fresh corn and heirloom tomatoes at the local farm stand so I think I'll have a BLT and corn on the cob for dinner. I'm just getting ready to make a double batch of banana nut muffins to distribute among my friends. I'm trying a new recipe and they get to be my taste testers What are you up to and what are you eating tonight?

I am going to make Grilled Sweet Chili Lime Chicken. It is a recipe that I found on Pinterest. Looks good, lets hope it tastes good.
I will probably make a Cesar Salad to go with it and I am craving something lemon so I will look for some type of lemon desert (easy) to make for desert.
I have been thinking all week about Akathy's ice cream maker and wish I had one!!

BLTs made with tomatoes in season are wonderful and sound delicious. That may just be what we'll have tonite too:) (that is if I make a run to the store for some bacon and then stop for some tomatoes at a stand. I planted two tomato plants in containers and am anxiously waiting for the tomatoes to ripen. Right now there's at least 15 or so green tomatoes on each plant.

I am making Chicken Tetrazzini: tetrazzini It has the dreaded goop soup in it, but you can make it with a light bechamel sauce too. I, however, am too lazy to do that most of the time and goop soup it is.

When we got home from grocery shopping I put a pot roast on to cook. It's done now along with green beans, carrots and potatoes. It smells so good! I foresee an early dinner!

I took a vegetarian cookery course today so I had courgette fritters and savoury baklava - non adventurous hubby had a tuna salad

The box we received from Hello Fresh yesterday was a huge disappointment - all 4 cold packs had holes in them and leaked all over everything, ruining the shrimp, which was the dish I was planning for today and the one I was most looking forward to trying. I have a blinding headache anyway, so I am just going to pick up a pizza on my way home from work, then the Hello Fresh meals will be the next 3 days, once I buy some replacement shrimp.

Wishing I lived close to akathy so I could be a muffin taste tester! We're having hamburger steaks with gravy, mashed potatoes, and green beans. Real comfort food. DH talked me into making one of his favorite cakes - chocolate chip oatmeal. It's a recipe from my aunt that she'd never given out to anyone until DH raved about the cake. She adores him, so she wrote it out for me.

Dd and I are meeting family at a small town restaurant known for their pizza. However, I found out that they have an all you can eat smelt fry this month. I'll decide when I get there!

I'm so jealous of those of you having BLT's. I've been craving one all week... since a friend gave us some delicious home-grown tomatoes from his garden! YUM! I think that will be added to the menu for next week.
I have a meeting with an organization I volunteer for right before dinner. So I am making sweet and sour meatballs in the crockpot. I will put rice in the rice cooker once I get home to serve with the meatballs and that will be dinner.

Dh is out tonight, so it's just me and the boys. We're having coconut curry chickpeas, the boys will have it with leftover rice and I've got a bunch of broccoli to eat up before we go on vacation, so I'll cook that up for me

Dh (who is a realtor) has to work tonight so we need to eat at 5pm which I hate It means starting dinner at 4pm which is too damn early in my books Tonight we're having shake 'n bake chicken breasts, alfredo noodles and some fresh cut veggies ...

Tonight is DD's favorite: chicken enchilada rice casserole. I have a dentist appointment at 4pm (which I am NOT looking forward to - it's to fill a couple of cavities, and last time I went in I was there for almost 3 hours because they couldn't get me numb enough to drill. What fun...), so I actually prepared dinner when I took my lunch break. So it's just sitting on the stove, and DH can throw it in the oven whenever they're ready to eat, if I'm not home by then.

I want to go to cookery classes with @pascoepea - I love learning more about cooking.
But no cooking for me tonight. I'm in Great Lakes (Chicago) with my mama and youngest son to see my son who has been at Navy boot camp graduate in the morning. Tonight we go to a meet-and-greet barbecue for all the families! Should be fun.

I'm headed to babysit my nephews tonight while brother and sil go for a meeting with their mortgage lender. They are in the process of selling their house and buying a new one, so cooking isn't high on the list of priority's right now lol. My bro will stop on his way home to get Burger King for a quick meal for everyone before they leave. Bad for me, but oh so tasty!

I will make a couple of hot dogs and we are having corn on the cob. I always eat way to much of the corn - I cook 6 for two people. I'm not sure if I will eat the hot dog.
It's the first of the local corn around here.

Creamy chicken enchiladas (kevinandamanda's recipe) Mexican rice, and refried beans. Trying to cut back on the sweet stuff, so probably no dessert or fruit.
