My original plan was to make chicken enchiladas because I bought really good enchilada sauce in the USA on vacation last month Unfortunately, dh has to work again tonight so I'm saving that for tomorrow and we are having take-out pizza instead ... no cooking for me

I've got leftover chicken and rice so it most likely will be fried rice with lots of veggies that need used up.

Grilled burgers and corn on the cob for us. I think I will skip the corn though. I spent the morning with a friend and we cooked and cut off nearly 30 dozen ear of corn for our freezers.

Well, we were going to go fishing tonight so I was just going to bring yummy snacks but looks like my husband and son have to go on a recovery so no fishing for us.

Nothing too fancy here tonight, that's for sure...... After all that talk the other day about bacon weaving, I just went out and bought some streaky bacon and some Kraft Mac & Cheese and I'm going to attempt the bacon mac cheese taco. DS and his cousin are having hot dogs with mac and cheese.

We had the leftover veggie cheese stuffed shells from yesterday. We didn't have much, since we had lunch at Chick fil A, so now there are still leftovers for me to have again tomorrow while DH is gone. I am happy about that, because I had a couple cortisone shots in my foot today and will be spending the weekend hobbling around recovering.

newlywoods03, we have dessert EVERY night. There's a dessert available for lunches too, but never the same dessert as dinner. My family, especially dh, has some weird "rules" about meals, and a dessert after every meal is one of them. I think one of the reasons dh married me is because I like to bake. CarefreeSadie, I could eat BLTs every night, especially if the tomatoes are fresh from the garden. liya, the thread title is "What's for dinner?", not "What did you cook for dinner?". Not having to cook or clean up after is always a good thing!

Roast salmon, with a broccoli wild rice casserole (PW recipe). First time I made the wild rice casserole and it was really yummy. Recipe link is below if anyone would like it. I liked it because there's no cream of anything - it's all from scratch and has quite a lot of veges in it. Only 1/4 cup cream is added to the sauce mixture (and I didn't add quite that much) for what ends up being a good 6 servings. thepioneerwoman.com/cooking/2013/11/broccoli-wild-rice-casserole/

I made mushroom stuffed pasta with a mushroom and garlic/herb butter followed with cougars bread sprinkled with fennel seeds - yes another cookery course - it was bread and pasta
