What's For Dinner?

Every summer 12 of my closest friends get together at the lake for three days of fun. One of the girls owns a three story cabin a little over an hour from here. This is our 36th annual retreat and we've only ever had two steadfast rules. NO MEN AND NO KIDS. WHAT HAPPENS AT THE LAKE STAYS AT THE LAKE We get together as often as we can between this and our annual banquet in January but these two things are the ones that short of death everyone shows for. We go Wednesday at noon and come home Friday evening after we have dinner and clean the cabin. Some can only make it for a day or just one night of course but we enjoy it so much we just don't miss it if at all possible. We set the date about 6 months or more ahead. Everyone brings a paper product for the cabin, an appetizer to share and your own drinks. Everyone also helps make one meal. We always have a big walleye dinner on the second night and my friend's brother is supplying the fresh fish this year and I'm assigned to sides. My friends love green beans so that will be one of my sides. I stopped at the farm stand yesterday and bought some beans and today I'm going to experiment. I'm going sauté half of them with grated carrots until crisp tender and then I'm going to put a teriyaki glaze on them. The other half I'll sauté until crisp tender and then make a honey sriracha sauce for them. With luck I'll like one of them enough to make for my friends and I can figure out what other sides to make. I'm leaning towards rice and a bread of course. Any ideas for me? Anyway, I'll be eating green beans tonight and I'll probably just make a summer sausage sandwich to go with them. What are you planning for dinner?

akathy that sounds such fun. How about a focaccia bread maybe topped with sun dried tomatoes and olives? I did my last but one cookery course today We had salmon encroute (I made my own puff pastry) with salad. Followed by profiteroles filled with chantilly cream and raspberries. I was very generous with the chocolate It was a baking course today.

I got off easy last night because we got take out pizza That means I have to cook tonight so I'm making chicken enchiladas with the enchilada sauce that I bought in the USA on vacation last month Then dh and I are going out to meet my bff's new boyfriend for the first time ... there will be wine ... I really hope we hit it off because she is sooooo into him

I'm making a savory oven pancake with bacon and kale. It's an experiment and hopefully my family will enjoy it. I'm also going to slice up a tomato and cucumber salad to go with it.

My brother and his girlfriend are in town for the week, so we are trying to decide if we go out for dinner, or if we stay home, grill out, and play wiffle ball.

A friend gave us a big ol' bag of grape tomatoes that I had to use up so I tried a new recipe today and made some tomato jam (which is delicious, and I don't even like tomatoes!) and will use the rest tonight. Going to saute some onion, tomatoes, Hatch chiles and make a frittata, along with some sausage and maybe toast or muffins with tomato jam. Ta da! Tomatoes used up!

My sister asked dh and I to go out to dinner with her, her dh and our Dad tonight. We went back and forth about where to go and couldn't make a decision between us. Last night she texted and asked if we'd be up for burgers and hot dogs at her house. DH is making a garden salad as I type. My sister is making cole slaw and also strawberry shortcake for dessert. The initial purpose of this was to get Dad out of the house for several hours. Not that we don't all enjoy each others company because we do

Homemade stir fry with all the veggies and rice. The dogs get the left over rice. They get all excited when the rice cooker comes out! lol!

Dh and I just can't get into cooking with our ds gone on vacation. We will have to figure it out because he goes away to college next year. Today just isn't that day- we have gift cards for of Chang's, so we are going to go there. (And no, we won't get the lettuce wraps, because I don't care for them!)

akathy, your upcoming girl's trip sounds tremendous. I'm jealous of your long track record. Long lasting, quality friendships are one of life's greatest blessings.
I'm about to head out to run some errands and I plan on picking up a pizza on my way home. We are a house divided when it comes to pizza: DH's 1/2 is meat and onion, while my 1/2 is veggies. At least it helps us practice portion control.

I don't really need to cook tonight since Dh won't need leftovers so... Waffles and scrambled eggs for the boys and I will make myself a chef salad since I just bought lettuce, tomatoes and avocado at the store this morning.

I'm trying a Pinterest experiment: Taco Lasagna. DS is excited, claiming that I have combined the foods of two of "his people," so it's sure to be good. Of course, he isn't actually Italian or Mexican; however, since he looks ambiguously ethnic, he happily lays claim to any and all cuisines that he likes.

We had a warm, sunny day for what feels like the first time this miserable cold summer. And celebrated it by throwing some hot dogs on the grill That's all we had time for between painting porches and trimming hegdes.

DH had leftover spaghetti I had a veggie roll-up Had ice cream and pound cake for dessert (it's my birthday - so we splurged).....we don't normally have dessert.

akathy, your trip sounds like so much fun! Dh is in charge of cooking and cleaning up on Saturdays, so it will be take-out from somewhere, eaten on paper plates. I am still responsible for dessert and it will be yellow cupcakes with chocolate frosting.

I am finally trying a new chicken fajita pinterst recipe! Along with that will be fresh chilled peaches (might make a cobbler, not sure yet) and Yvonne's mexican rice.

akathy your green beans sound delicious. I'd love the recipes if you have a chance to post them one of these days. It sounds like you have a fun very weekend ahead of you. Enjoy! I took chicken out this morning with an idea to make something new. No idea what I'll end up with but I'm thinking of pan frying it and then making some kind of sauce for it with chicken broth and some herbs. We'll see what happens.

I just got my spiralizer so I'm making crispy baked shoestring sweet potato fries and I'm going to have it with a fish sandwich that I think I'll toast. I don't normally eat that heavily so I'm probably going to go all out and have a mini can of orange Fanta with it:).

We met friends at one of our favorite Mexican places. DH and I were planning to go to a new ice cream place to celebrate our first date 40 years ago! They went with us. It was fun.

I made the Creamy Sun Dried Tomato and Parmesan Chicken I was supposed to make the other night with roasted asparagus and rice. The cream sauce was so good I wanted to eat it by the spoonful--yummy!
We're heading out to see The Gift now, it looks so good.

We had toasted cheese sandwiches made with jalapeño cheese bread.
And when I say "toasted" I really mean that - we made them in the toaster using the Boska Toastabags I bought a few weeks ago at Sur La Table. Very handy invention!
