Well, I just made mac and cheese so either that alone because I am lazy, or that with something else. I made a stove version this time, mostly because I want to freeze some and it is better for freezing if you don't bake it first. But also because I only had the pre-shredded cheese and that always mucks up the baked version. So other than the mac/cheese, I have no clue. I was out of town yesterday and part of today, so I ate a whole lot of rich food. The mac/cheese is 100% comfort food. Will you share your recipe? Sure! Except keep in mind that I make it by feel (you know the things that you make without measuring because you make it so much?) Boil a box of elbow noodles for about 6 1/2 minutes or whatever the least amount of time recommended. Meanwhile: make a roux. I use probably four tablespoons of butter and equalish the amount of flour (I have a gravy ladle that I use scooped to a heaping mound.) Add milk in stages-like two cups, stir to thicken, add more milk, stir to thicken, add more milk so it is pretty loose. At this point, if you want you can add a couple of tablespoons of cream cheese (I do) and stir until melted. Then add cheese. I use cheddar because I like the old school taste, probably about 12 oz.. Stir until melted. Temper one egg and add to cheese sauce. Add salt and pepper to taste. I sometimes throw in a little season salt instead of salt. Mix the sauce and the cooked/drained noodles. Stir it up. If it looks too dry, add a bit of milk. Then eat and enjoy. Save leftovers in individual portions and freeze. When you defrost, you can either nuke them or bake them as you normally would a mac/cheese. I am sorry this is so vague though. I have made it so many times over the years that I tend to just kind of eyeball it. The thing is, if you have pre-shredded cheese, it is lightly coated in a cellulose (floury stuff) to keep it from sticking. That messes up the ratios of liquid when you bake it and I think makes a drier finished product. So if that is all I have, I make the stove top version because I can adjust the liquid better so it is creamier and not dry.

Congratulations padresfan619compwalla praying for you! I have to admit, I read your post as a red meat and banana dessert. I'm glad I re-read that. DH and I had a baby shower to go to today..it was a co-ed shower and pretty fun! We didn't eat much there so we picked up a pizza on the way home because I didn't take anything out for dinner tonight. I meant to pull out some ground beef for tacos. Maybe tomorrow.

We had Kevin & Amanda's Spicy Sausage Pasta. Unfortunately it was a hit with DD's boyfriend. I say unfortunately because he went back for seconds which means I don't get any leftovers today!

I was waiting for a phone call that never came - even accidentally took a nap - which changed our dinner plans. So I made a quick, easy comfort dish that no one else understands! Macaroni and V8 juice with a little butter, salt, pepper and parmesan cheese.

We are watching the Vikings game. My husband requested chili and my son requested tacos. I made both and added salad and green beans as the sides. I'm not cooking until Wednesday now.

Some kind of red meat and a banana dessert. I had my pre-op testing done on Friday (I'm having a right lung lobectomy on Tuesday) and they found I'm a little anemic and my potassium is low. The PA prescribed steak and bananas. compwalla baked potatoes are high in potassium too. I'll say an extra prayer for you on Tuesday. Please update us when you can. Hugs!

We had gammon steaks steamed new potatoes and green beans from FIL garden Snap.....again! We had gammon steak and pineapple, new potatoes, green beans and corn followed by brandy snap baskets (from M&S not homemade this time! ) filled with strawberries and vanilla ice cream. Lol BarbaraUK we obviously both have excellent menu selection genes maybe we're related
