What's For Dinner?

I never did get around to making those green beans yesterday so I'm making them today I invited a friend and her DH over for a super casual Sunday night dinner. I found a recipe awhile back for meatloaf muffins I've been wanting to try. They'd be so handy to have in the freezer if they're good so I'm testing them out on my friends. I'm going to also make baked potatoes rubbed in olive oil, sprinkled with coarse sea salt and served with butter and sour cream. Those plus green beans two ways (teriyaki glazed and Sriracha Honey glazed) and a loaf of bread will be dinner. I plan to have a vote between the two green beans and the meatloaf muffins over dessert of homemade strawberry ice cream and sugar cookies. I love having desserts tucked away in my freezer to pull out when I need a quick, easy one What's on your menu today? (Are you old enough to remember the TV show Hee Haw? This dinner thread always reminds of the skit where they ask Grandpa what's for dinner. Afterwards they always said Yum-Yum Do you remember that?)

I bought some yummy enchilada sauce in the USA on vacation last month No idea what the dd's will eat as enchiladas are not on their picky list of foods

Some kind of red meat and a banana dessert. I had my pre-op testing done on Friday (I'm having a right lung lobectomy on Tuesday) and they found I'm a little anemic and my potassium is low. The PA prescribed steak and bananas.

I have some fresh tomatoes hand-picked by my brother, so it's BLTs at my house. And because I think I've missed the last couple of days: I made a baked spaghetti thing on Friday. So glad I learned from the peas that spaghetti is soooo much better when you put it in a casserole dish and drown it in gooey cheese. I also want to report on the Bay Area's latest fast food phenomenon. You guys are familiar with Amy's organic frozen foods, right? Well, the company just opened a fast-food drive-thru place in the North Bay. All vegetarian, also with vegan options for everything they sell. We stopped by there yesterday afternoon to check it out, and I have to say, it was really good. We tried the double burger, the broccoli mac 'n cheese, the fries and the strawberry shake (both versions ... the vegan one was made with coconut milk). Everything was actually quite delicious, and I am definitely a meat-eater, so that's saying something.

We are having London Broil, corn on the cob and green beans. No idea about a dessert, maybe ice cream. Unless I get adventurous and go to the store. Nah, not happening! LOL.
I definitely remember Hee Haw, but I had forgotten about them asking Grandpa what was for dinner!!

I wish I had something like that nearby. Are you going to weave the bacon for your BLTs? I have a roast in the crockpot. Will ask DH if he wants the shredded beef over noodles or mashed potatoes! I haven't used my crockpot in a month or so. I had to think about what buttons to push. The grill has been taking priority lately.

We went to Smokey Bones for lunch and brought home more than half of our ribs so they'll be dinner. Dh ordered their multilayered chocolate cake to go so maybe he'll share it with me for dessert.

We are having sirloin tip roast, mashed potatoes and some kind of veggie plus a green salad. Last night we ended up at a friends and had wine and cheese. I *have got to* cook this week. I am usually a healthy cook and I have slacked off majorly this summer. I'm so sick of eating out it isn't funny.

Today is clean out the fridge day. There seems to be just a little of everything we had for dinner last week.
If that's not enough to fill everyone up, there's pastrami and cheese in the fridge. Hungry people can fix their own sandwiches.

akathy I'd love to hear your green bean recipes once you've tried them out. Green beans are a fave of my YDS who is super picky about veggies otherwise. I'm always looking for good gb recipes.

Steaks, baked potatoes made exactly the way akathy said above, and corn on the cob. Our baked potatoes will have cheese, green onions if they are still good, and I can probably scrounge up some bacon. Bleu Cheese Zip sauce and sauteed onions and mushrooms with the steaks.

Well, I just made mac and cheese so either that alone because I am lazy, or that with something else.
I made a stove version this time, mostly because I want to freeze some and it is better for freezing if you don't bake it first. But also because I only had the pre-shredded cheese and that always mucks up the baked version.
So other than the mac/cheese, I have no clue. I was out of town yesterday and part of today, so I ate a whole lot of rich food. The mac/cheese is 100% comfort food.

We had gammon steaks steamed new potatoes and green beans from FIL garden Snap.....again! We had gammon steak and pineapple, new potatoes, green beans and corn followed by brandy snap baskets (from M&S not homemade this time! ) filled with strawberries and vanilla ice cream.

padresfan619, Happy Anniversary! compwalla, I'll be sending good thoughts on Tuesday. I know it's scary, but you're amongst friends and not alone. I think you need a banana cream pie or banana cream pie shake from Sonic. Potassium is that important. hehe.

I have a crazy work week coming up, so I spent 2 hours today preparing meals for the week: A pan of lasagna, a roasted red pepper/spinach quiche, put salmon in tin foil packets, made 4 days worth of school lunches for myself...
So to answer the question, what's for dinner? One of the above.

Tonight's dinner was an experiment, and it worked. Frozen chicken breasts cooked in butter chicken sauce in the pressure cooker. Then served on jasmine rice and naan bread! It was delicious!
