So dh really wants to take off a few pounds so we have decided to go meat free a couple nights per week ... I've been surfing my Pinterest salad board for recipes and so far it's been a hit OK, a hit for dh and me ... dd's hate salad unless it is Caesar Tonight is a night for salad so I think I'm making Fiesta Bean Salad ... it has black beans, chick peas, red onion, grape tomatoes, avocado and cilantro in a dressing ... sounds yummy to me What's on your menu?

My sister from Connecticut is flying out tonight for a week. She keeps semi-Kosher so I am busy trying to get all the pork out of my fridge. Not that she cares it's there but there just happens to be a lot in there taking up space that probably won't get eaten over the next week. So I ate the last three slices of bacon for breakfast, and I will finish off the pulled pork for dinner. There's also a package of carnitas from Costco that I will probably just toss in the freezer. The hot dogs are Hebrew National so those are safe.

New vegetarian recipe for us. Butter tofu and chickpeas, which is basically and non-meat version of butter chicken, and I'm still trying to figure out where the butter-part comes in, the only fat is 1 teaspoon of olive oil. We're having it with steamed rice and broccoli.

Dh is having a deep cleaning done at the dentist today so I will be fixing something soft.
So tonight is pasta in red sauce with garden salad. Easy to fix and easy for dh's gums.

I made the Kevin and amanda brined pork that there was a thread about. It was great, but we still have a lot left so needing to get creative. So I'm making a pizza that is very similar to one that I get in PaIa Maui that has pork, mozzella cheese, goat cheese, pineapple and onions.

I just got back from the market. I'm making baked scallops, fresh bread from the bakery, bought pre-made stuffed quahogs, asparagus, and wedge salad. Got home and realized that I totally forgot that ds has an exit internship dinner with his pastor and dd is playing in the band in a musical. Oh well, more scallops for us

It is BFs turn to decide tonight. It is cold and rainy again, so he will likely make soup. I made white bean and chicken chili last night, with corn bread and green salad. I had a rerun of that for lunch today. It was 47 degrees F this morning when I got up. Way too cold for August!

This thread makes me think I'm starving! LOL but I love getting new meal ideas from it.
We are having Chicken Parmesian. Buy Chicken from the deli, put it over pasta and sauce and top it with mozerella, toast that in the oven for a few minutes. 20 minute meal!

another freezer meal-- yay! meatloaf with salad and potato of some sort. I'm still not meal-planning for an entire week, but at least we're not getting take out quite so often and I don't have to do the 'what should we have for dinner' quiz every night at 6 pm...

LEFTOVERS - We had leftover White Castle Sliders from over the weekend so we finished them off. Plus one night I went out with a friend and brought DH a spinach and artichoke quesadilla (that was gone) but the restaurant threw in a bag of chips and bean and salsa dips so we finished that off too. Cleaned out the frig and got rid of the spaghetti from last week. Now to start filling it up again.

DH is gonna bring a pizza home for himself and the kids, and I'll probably just have a frozen Atkins dinner with a salad.
I've had the most horrible headache for 2 days now, and I just couldn't bring myself to go to the store, let alone cook dinner. The kids start school tomorrow and I'm having dd stop at the grocery store to pick up a few things for the first few days of lunches.

I am grilling my almost weekly dinner of grilled Italian sausage, zucchini, corn, onions & peppers. If there is asparagus in the fridge I will grill that too. leannec your salad sounds delicious.

I made a new risotto recipe (chicken, mushroom & garden vegetables). It was fairly easy to make but not spectacular.
2nd new recipe of the week, probably won't make either again but at least they weren't inedible, just meh!
