After fabulous back to back annual girls retreats ending with a 60th birthday party in town last night I'm back One of my favorite parts of my week was Thursday when the temp was in the upper 90s and there was just a calm breeze. Ten of us got to spend the day on a huge house boat, dancing to the music, jumping and diving from the third deck and all kinds of goofy fun. There are three more in my group and we've been friends since 1978 We have a long, wild, goofy, crazy memories together. Anyway, I stopped at the grocery store on my way back to town looking bedraggled and got a rotisserie chicken. I'm busy doing laundry so I think I'll probably just have a chicken sandwich for dinner tonight. What are you having? Thanks to scrapmaven for doing this while I was gone

I'm "hosting" a birthday party tonight and the birthday girl wants a baked potato bar. So baked potatoes with all the fixings. I'm only providing appetizers and a clean house. Her DH is providing the food.

At an attempt at posting more during August...here we go! I just started back to school as an adult and this week has kicked my tail. I will be working on homework all day but I still need to feed my husband and teenage son. We are having one of my son's favorites. I am making blackened chicken with alfredo and fresh green beans. I might make chocolate chip cookies too but it depends on how quickly I get my homework done! I get so many ideas from these meal threads -- so thank you!

akathy, you're most welcome, but leannec took over in your absence. Sounds like you had a blast on your trip. Diving off the boat sounds like great fun. Tonight we're having chicken parm, pasta w/tomato sauce and veggie TBD.

It's our 19th anniversary, so we ate out (which we rarely do). I love not having to do the dishes (cooking is tolerable, but I intensely dislike the clean up afterwards)!

Welcome home, akathy. My sister who keeps Kosher at home is visiting from Connecticut and we've been breaking the rules all week, just because we can.
(Note to the peas who probably think I'm a horrible person for making light of a religious tradition: they keep Kosher because her husband prefers to. He's the child of Holocaust survivors and he likes to keep up the tradition. But they don't worry about it away from home, except they never eat pork or shellfish. So, I would call it casual Kosher. We grew up Jewish, too, but never kept any kind of Kosher.)
So ... we've had a lot of beef this week. I wanted to make chicken tonight but she complained she eats chicken all.the.time at home. She's doesn't eat pork or shellfish, I rarely cook fish, and no one wants vegetarian. So beef it is.
I'm making spaghetti with meat sauce with lots of chunky vegetables thrown in, too, just to annoy my other sister (I like the veggies). And salad and maybe garlic bread if there's enough sourdough leftover from the other day.
I'm not sure how hungry we'll actually be because we're going out for afternoon tea this afternoon beforehand.
Sorry I wrote a whole freakin' book. ETA and how did my font size get so big? I don't know but I like it!

we're having friends over for dinner so there will be 10 of us - 5 adults, 4 teens and my 8 y/o.
We're having roast pork, roast potatoes, mashed turnip, cauliflower cheese, glazed carrots, Brussel sprouts and yorkshire pudding. Brownie trifle for dessert. Appetisers are simple - cheese cubes (swiss and cheddar); assorted vegetables and ranch dip; and chips with french onion dip.

Not feeling like cooking tonight, so it'll be Al's Beef; gawd I love that stuff. If anyone's ever in Chicago, do yourself a favor and get thee to an Al's Beef. It's so frickin' good, and the fries are awesome (although I'll skip the fries). Lots of people love Portillo's beef sandwiches, it's just not my favorite. I think my mouth is starting to water.

I went to the Farmer's Market yesterday. Tonight will be grilled fresh veggies - eggplant, corn, red, green yellow peppers, with some grilled chicken and grilled peaches served with an ice-wine reduction. yummy - all is local and so fresh.

Roasted Italian sausage with a lot of full cloves of garlic, three colors of bell peppers, potatoes, and either poblanos or cubanelles. You cook it in Italian seasoning and white wine and it is seriously, one of the most delicious meals I have ever had.

Ribs, but I need to get off the couch and get them in the oven. Dh will finish them off on the grill with a smoke box later. We bought some lots of and pasta salads yesterday to have with, along with veggies and dip. I also have some fresh green beans and corn on the cob, but that will be way too much food, so I have to make some decisions!

You know, the "good for you" cream cheese mix spread crust with veggies on top to disguise it as totally healthy? Yeah, that!

Skirt steak with corn on the cob, peppers and I'm going to try cauliflower mash. Yesterday we picked up some wonderful heirloom tomatoes, so if I have chance to stop and pick up cilantro and red onions I'm also going to make salsa.
