I did errands today while my cleaning did her magic so I invited friends over for dinner. I have leftover rotisserie chicken that I'll make chicken pot pie with and I've got fresh veggies for a salad. The couple that's coming over are just like family so I don't feel I have to get all fancy for a meal. They'd love me even if I served them PBJ What are you planning for dinner?

I put a roast in the crockpot and it's smells so good. My son and his family will be here for dinner. I chose to make the roast because it's one of my daughter in laws favorite:)

DS and I have eye Dr appointments this evening, so DH will reheat the meatballs from Saturday, DS will probably eat the ribs leftover from last night before we go, and then when we get home, I told him I would help him make the pork dumplings that are in the freezer. I will either have some of those, or some pasta salad.

Our house is so stinking quiet (6 kids to zero) that I'm glad that we are going out to dinner with the in laws. We are going to a restaurant that dh & I just discovered a few days ago that was awesome! After dinner there will be a sunset walk on the beach Ugh... the conflicted feelings of loving the quiet time with dh and missing the kids and the busy household...

It's meatless Monday here in my house tonight I surfed allrecipes.com for a salad recipe and decided on Quinoa Vegetable Salad ... it has a bunch of veggies in it with cilantro and an oil and balsamic dressing The dd's won't eat the salad of course so they are fending for themselves

We went out for lunch/dinner at Copeland's In New Orleans. DH had Crab Stuffed Catfish Roulade and I had Catfish Acadiana. It was wonderful.

I'm trying new tofu recipes because I'm fed up with the same old Asian style tofu that I always make. Tonight it's Mattar Tofu with steamed rice. The tofu has frozen peas with it, but because I'm a mean Mom, I don't consider those a real vegetable, so I think I'll roast some cauliflower to go with it.

We had friends visiting from out of town all weekend, so ate out lots. I have no idea about dinner tonight; I'd be fine with a grilled burger.

I'm using my Costco rotisserie chicken and making lemon chicken pasta. I think I'll pick a fresh cucumber and slice it up, too.

I am making grilled pepper steak and a salad. I picked up some really great bread baked with garlic cloves in it over the weekend. I think I will serve that with olive tapenade. I might make a boxed cous cous mix that I like as well.

The Downtown Association has a DeLish promotion happening this week. Several restaurants have prix fixed menus with reasonable prices. Tonight I am going to an Asian Fusion restaurant. 3 courses for $25.00.
For lunch tomorrow my friend & I am going to another restaurant that has a cesar pecan salad, perch fish w sweet potato fries and waffles with nutella/bananas for $15.00.
I love that I can go to these different places and try some different foods at reasonable costs. Lunches are $15.00 and dinners are between $25.- 35. for 3 courses.

We're having spaghetti, roasted green beans, cauliflower, carrots and shallots, fruit (blueberries, strawberries & pineapple), homemade garlic bread (roasted garlic butter spread on leftover hamburger buns ), and M&M cookies for dessert.

Hot dogs, baked beans, and french fries. Healthy? No, but it is Monday and I like easy quick dinners when school is back in session as there always seems to be more homework on Mondays.

I'm making a Rachel Ray recipe for tuna pasta puttanesca. I love pasta anyway... it's one of my weaknesses. And with all these wonderful flavors, it can't miss.

It is National Waffle Day, so I am trying a new recipe for carrot cake waffle I found online the other day. Ummm...yum!!!! I made a quiche Lorraine for dinner. I didn't put it into the oven til 7:15pm and it takes an hour so basically I filled up on carrot chips and ranch and some oatmeal raisin cookies in the meantime. I did have a slice of quiche when it cooled. So good!
