I have a boatload of leftover mashed potatoes because I was rescuing 5 big baker potatoes from spoiling, they had started to sprout. It gave me a Kitchen Aid mixer bowl full. I have frozen scoops before, and that works well, but my freezer is so full right now. Any ideas? Recipes?

Oh WOW, those muffins look really good!
I usually form them into patties and fry them in butter until they have a golden crispy crust.

My mom does make fake potato pancakes with leftovers though... Roll into a ball and press flat, then into a skillet and cook like a pancake... Good just as is, really good if you add some butter and garlic to the pan... You can top it with leftover chicken, or grilled veg and some cheese...
I've used it to make mini Shepard Pies...

On the rare occasion that I HAVE any leftover mashed potatoes, I make potato soup. Add enough cream or half-and-half to thin the consistency to soup. Saute some diced celery (or celery tops) in a little butter and add that. Heat on the stovetop, and add parsely, a pinch of salt if needed, celery seed, or whatever other seasonings you want. YUM!

I've never found anything I end up doing other than making shepherds pie or freezing it for future pies I love frying it but it just soaks up too much butter so I very rarely do it.

I add shredded cheese, onions or chives, a beaten egg and what ever else sounds good at the time and make potato pancakes.

I love them fried in a little olive oil until crispy and golden. I've had leftover mash around long enough to do more than that!

Thanks for the ideas ladies. We love our mashed potatoes too, but with a mixer bowl full to the top and only 3 people for dinner, well, you see my problem. I have no problem just eating them, but I think I'll try the potato pancakes idea. I completely forgot about shepherds pie, because I hardly ever make that, sounds like a winner!

Like Kate and others have said, we make thin patties of them and fry in butter till beautifully browned. Sooooooo good.

When I freeze them, I scoop them with an ice=cream scoop out on a sheet pan and freeze until solid, then put them all in a plastic ziplock bag. You can take out however many scoops you need that way. The texture and taste are unaffected. You can freeze other potatoes like sliced or cubed, you just have to blanche them first.
