I had lunch with a friend yesterday and have Thai leftovers from that. I'm leaving for a few days at the lake tomorrow so I want my fridge empty. Quick, easy and yummy, just what I need Last night I made the dough and cooked apples so I could make apple turnovers for my freezer this morning. DD is gone through the weekend at a Pharmacology Converence, works all day Monday and needs to bring goodies to a bible study group Monday at 7:00 after her son's 5:00 football game. I'll come home from the lake Monday morning and pop the turnovers in the oven. I'll make the glaze and drizzle that on them and she'll have fresh baked apple turnovers for her group I love having apple turnovers in the freezer, you can take only what you need and 20 minutes later they're done and your house smells amazing I got this recipe from my Grandma and it is the best ever! What are you doing for dinner tonight?

akathy, shall I start the thread while you're relaxing at the lake? I don't wanna deal w/this right now. I think it's gonna be the spinach and mushroom chicken pasta in white wine that I was going to make last night. However, I have kids w/the back to school cold that is going around. So, it might be pizza. TBD.

my sourdough starter is ready, so I am making homemade sourdough pizza I'm kinda nervous-never done sourdough before-I have storebought dough as a back up in case of failure

akathy care to share your apple turnover recipe? Thought I'd share 2 pictures from last nights dinner... Leaving the harbor Sunset The weather was perfect, the water was pretty calm and the sunset was beautiful. Tonight I'm making bbq ribs, potatoes and green beans. We are still in the middle of painting our bedroom trim so we'll be eating a late dinner. ETA: sorry the pictures are so big. I've tried to resize them a few times but obviously it's not working.

I found a great looking fall recipe, lentils and sausages which you cook in the oven, the only problem, it's probably 90 degrees today and really not the right meal. Oh well, so be it. It's on the menu I wrote out for this week so that's what we're having. I just need to figure out what veggies to put with it. Right now I'm leaning towards broccolini.

If my intuition was correct and we have frozen slider patties in the freezer, we will have those. If not, well, I really, really hope we have them! I have leftover kielbasa and kraut from last night that I will probably eat instead of sliders anyway.

I've got a bridal shower to attend tonight...and it starts at 7:00. Lets hope things don't take very long and drag out Either way, I live about 3 minutes from the venue, so not a long drive home for me. yay!!! So I'm going with a slice of leftover meatloaf from last night, and hoping that there are some good treats at this shindig. (I've heard there should be a veg tray, sweedish meatballs and some other stuff besides the cupcakes/desert choices). And although it may sound like I really don't want to attend tonight lol... I think its more the typical 4 pm I just want to go home and relax instead of socializing angle

That made my mouth water just reading it. Giant salads for dinner here, using up odds and ends of whatever veggies are in the fridge. We are having a family party here tomorrow night and I really need to clear space in the fridge!

I was planning to make a chicken breast recipe that I saw on Facebook but dh ate leftover chicken breasts for lunch and doesn't want them again So we'll have the frozen lasagna that we got at Costco the other day ... with some garlic bread Nope, no veggies

We are going to have breakfast burritos since we didn't make them last night since we got take out instead. I've got eggs, ham, mini peppers and garden tomatoes to use for them. Might make the boys a smoothie to go with it.

We were going to have tacos, but DH's parents called and said they're coming to visit us tomorrow through Sunday. They're coming by train and will be here around 10 am, so someone will have to pick them up. Since I'll need an easy lunch for four more people (they have two kids), I decided to fix the tacos for lunch tomorrow so it can be ready when they arrive. Everyone can pick their own toppings and complaints should be at a minimum. So tonight it's red beans and rice with some smoked sausage. I'm still working on the menu for the weekend. Don't you just love last minute guests?

ingrid6 and dreamer, I'd love to share. The dough will look weird when you mix it up but trust me it'll be fine the next day and easy to roll out. Apple Turnovers5 cups flour 2 cups plus 2 Tbsp lard 1 tsp. salt 1 pkg. yeast 1 cup warm water 2 eggs, beaten 3/4 cup evaporated milk * Dissolve yeast in warm water and let sit 10 minutes. Mix salt with flour. Cut lard into flour and salt until crumbly. Add eggs, evaporated milk and yeast mixture to flour mixture and mix well. Cover and refrigerate overnight. ( I use a pound of lard and 2 Tsp. Solid Crisco because I don't use enough lard to buy an extra pound just to use 2 Tbsp. of it.) Filling:14-15 large Granny Smith apples, peeled and diced 1-1/2 cups sugar 1 Tbsp. cinnamon 1 Tbsp. flour 2 Tbsp. instant tapioca * Cook until thick. Cover and refrigerate overnight. Next day:
Make a mixture of flour and sugar in equal parts to roll out dough. Take a scoop of dough out of bowl and return rest to fridge. Liberally using sugar and flour mixture, roll very thin. Cut into 4 inch rounds and place on cookie sheet. (I use the Pampered Chef cutter some people use to make Uncrustables. Just don't use it to crimp, it doesn't work with these. Place a heaping tablespoon of apple mixture onto a round being careful not to overfill or get on the edges. Cover with another round. Dipping fork into sugar & flour mixture crimp around the edges to seal very well. Dip fork into sugar & flour mixture and poke holes in the center of each. Repeat until all ingredients are used up. (I usually end up with leftover apple mixture.) place cookie sheets in freezer. When turnovers are frozen pop off cookie sheets and store in freezer in Ziplock freezer bags. When ready to use, bake frozen at 375 degrees 15-20 minutes until nicely browned. Cool and drizzle with an almond flavored glaze. (I mix powdered sugar, a pinch of salt and a dab of butter with cream until desired consistency. I make it thicker than a glaze, flavor it with almond extract and pipe it on in stripes.) One recipe makes around 4 dozen turnovers.
