We are having a baby shower for a coworker who is having her first baby (boy) tomorrow night. I was thinking of shredding a couple of rotisserie chickens and tossing it in the crock pot with bbq sauce, but that doesn't seem too elegant. I do love how easy it is, though. Considering that I'm here until 3am, and have to be back at 3pm (shower is at 730pm), what ideas do you guys have?

there is always my 'go to' crockpot meal: little smokies in BBQ sauce in the crockpot. This is a good recipe. Not fancy but everyone always love them!

Burning Feathers Italian Beef--easy peasy and everyone likes it! Cook it right in the crockpot at work or cook ahead and leave it on warm until the party.

Sloppy joes work well in the crockpot for a potluck. I have made buffalo chicken meatballs in the past and the have gone over well.

Sweet and sour meatballs in the crockpot.
2 12 oz jars Heinz chili sauce 1 32 oz jar grape jelly 1 bag meatballs (about 80 in a bag)
Put chili sauce and jelly in a large pot, heat until jelly is melted and sauce is smooth, stirring often. Add frozen meatballs; heat until meatballs are thawed and then simmer for 3 hours. Easy, peasy and always a hit.

Do the chicken, but add green chili. Less mess

My goto for pot luck is Hawaiian pineapple chicken. Its 3 ingredients & always gets eaten. I don't shred mine...I just cut into chunks.

I like to do cold pasta salads for potlucks because I don't have to reheat (though it sounds like you might be going straight there...). Bow tie pasta, Italian Dressing, shrimp or chicken or no meat, and then whatever add-ins I have handy (olives, pine nuts, artichoke hearts, cucumbers, tomatoes, etc.).

meatballs are my go-to potluck dish - I never have leftovers to bring home.
I use 1 bag of meatballs, 1 bottle of bbq sauce and 1 tin of jellied cranberry for mine and dump it all in the crockpot.

BBQ pulled pork is my go to for potlucks but since it's a baby shower I would do chicken salad with croissants. Jen

I always take deviled eggs. No one else ever brings them and they disappear.

A nice salad with a couple of bottles of salad dressing is always welcome or some nice fresh fruit cut up.
