My grandsons are coming to eat with me and we're having fried chicken, mashed potatoes & gravy and some of the corn I cut off the cob and froze in a butter sauce. I'm planning to make Rice Krispie bars for dessert. What are you having tonight?

The recipe calls it Italian Rustica Pie. It is basically a quiche with a crust on the top and bottom. It has ham and provolone cheese. My DH loves it and about freaked out when I told him it was a quiche, lol. I'm serving it with lima beans and brownies for dessert.

Does anyone know if I can freeze leftover fried rice? Because if not, it appears I will be eating chicken fried rice for the rest of time. (I can't take half of it over to my sister's, because I kind of scorched the chicken. It tastes okay, but I still don't want to feed it to anyone else.) And now what I really want is Rice Krispy bars!

Catfish and coleslaw. We haven't had catfish in ages, and I hope I still remember what to do with it.

Then I guess I'll have a little fried rice later on, and the rest is going in the freezer. Happy Sunday, everyone.

Right now, I have a brisket in the oven. It smelled really good until the liquid in the pan started to spill over! That is tomorrow's dinner, as well as Wednesday's. Tonight and Tuesday, we are having Beef Taco Bake.

If you were to ask me what I would want for my final meal it would be fried chicken, mashed potatoes and gravy, black eyed peas and biscuits. Corn would be a perfect compliment to the meal.

Anything to get rid of this cold/cough/bronchitis Oohh... glad you mentioned your biscuits. I think I will whip up a batch of Cheddar Bay biscuits to go along with our salads. They have garlic and cheese too so I think they're probably close to your Red Lobster biscuits.

DH had a bowl of soup and crackers - he is now feeling well today. I had nachos. Not too exciting around here today. But at least the weather has cooled down in the deep South.

After munching on smoked gruyere, cheddar, and sea salt/olive oil flatbread crackers while watching the game, we're just having breakfast for dinner... sausage and waffles and some kind of fruit.

It's crazy warm today!!! It's 71* right now. Thankfully, Dh's parents invited us over for dinner and they are making breakfast burritos. I'll take sunshine over the unending rain we will be getting very soon

We've been cleaning the house like crazy people here today ... shampooing our carpets etc. Fun times I'm being lazy and just throwing a frozen lasagna into the oven ... we'll have garlic cheese bread with it ... nope, no veggies

Baked chicken parmesan, pasta with both tomato and white sauce (your choice) and homemade garlic bread. Oh, and a spinach salad. Sundays I try to make a meal from scratch and this is one everyone will eat (as long as I make two sauces, of course).

I'll post the recipe for Mrs. Brothers' chicken but I have to tell the story first. Many, many years ago I worked at a school for developmentally delayed adults. Once a month, the Mother's club made lunch for the entire faculty. Mrs. Brothers was a lovely woman who had a son (adult) in our school. His name was Carl. She would make this dish several times a year and it was always so, so good. It's made with canned soup, so you've been warned!
Mrs. Brothers' Chicken
Serves 3-4
3 boneless, skinless chicken breasts 2 cans Golden Mushroom soup 2 jars sliced mushrooms DO NOT DRAIN Flour, salt, pepper, canola oil
Cut chicken into bite sized pieces. Dredge in flour, salt, pepper in a gallon zip lock bag. Heat oil in large pan. Brown chicken until just golden brown. Do not cook through. Drain chicken on paper towels and dump into 13x9 pan that has been sprayed. Mix soup and mushrooms. Add a bit of water to make the soup loose. ( the original recipe called for a cup of white wine). Cover with foil and cook at 350 degrees for 40 minutes. Remove foil and bake for 15 more minutes. Serve over rice with some "juice" from the pan.
This is my family's favorite recipe. I always serve it with a fresh veg and salad.
