Today is finally the day I get to do nothing I did break down a rotisserie chicken this morning. I made some chicken salad for sandwiches and put a bag of diced chicken in the freezer for another meal. The chicken scraps and carcass are in my electric pressure cooker along with onion, carrots, celery and bay leaf. It makes such a nice rich stock I love having containers of it in the freezer. For dinner I'll have chicken salad on toast and some pickled green beans. What are you having?

It's Bunco night for me. We're having an Italian theme, so I'm making a Caesar salad to take. Lasagna, tortellini, garlic bread and tiramisu are on the menu as well.
DH and the kids will be ordering pizza.

Our boys go to a private school and tonight is their dinner/auction. It's turkey dinner with all the fixings. Plus, there are TONS of things to bid on, one being a trip for 2 to Maui! Umm, yes please.. Anyone want to bid on it for me

I am making steak skewers. Basically skirt steak, red potatoes, onions and peppers cut up in chunks. Drizzle with olive oil and salt a pepper. Thread on metal skewers (I always pre-cook the potatoes in the microwave first). And put on the barbecue. They are sooo good.

Tonight our wonderful senior dog has her annual physical. It always makes me nervous that they might find something wrong, plus, this time, I've a feeling they may say the "C" word. She has a few black raised bumps that have appeared and I'm scared it might not be good news. She's 13 and too old to deal with any major treatment, although, to see her running around with the young dogs you'd never know how old she is.
Anyway, because we'll get stuck in the crappy commute traffic and won't be home until late I'm planning a quick and easy dinner of shrimp fried rice and broccoli.

I'm roasting a chicken breast with a yummy topping. Mayo, Parmesan cheese spread on top with Panko bread crumbs. The chicken is so moist and the topping is crunchy. Baked potatoes and Brocolli.

We took dd#2 to the orthodontist this morning and she needs braces ... cha-ching $$$$$ Dh is helping his friend lay flooring tonight so he won't be home for dinner ... I have to take my mum to an appointment soon which means that I don't have time to go to the store today ... I usually shop everyday because I'm a SAHM and enjoy it That means that I'll take the dd's for takeout tonight ... not sure where but I will also have wine

Making two meals...I often do this when I have time because I'm basically a vegetarian and DH is a confirmed carnivore. For me: home made veggie burgers and for DH a chicken and rice casserole. We'll both have a salad as our side.
It's a rainy Friday night, so I don't mind puttering around in the kitchen.

I keep thinking a need a green vegetable for color, but I think I have enough vegetables at one meal. akathy, I chuckled when I read what you did after saying today is "the day I get to do nothing". Your "nothing" is more than some people's busy. newlywoods03, I've got $1.37 saved up that I would be willing to give you. Not sure how much it would help though.

Per the usual, I don't know. Oldest ds is wrapping up.... band.... <snort>, and so he won't be here. Youngest ds already told me that he wants a calzone. I am not sure what I will eat. I just had leftover roast for lunch with salad and homemade ranch dressing and the best crusty sour dough bread. It was amazing! The kids' dad and I are doing the co-parenting thing and going to the football game to see ds in the band. The line to eat food there is ridiculously long. We will likely stop and grab some food as well. Unless he wants to eat roast, which he is welcome to do. Band is almost done, so some of the hecticness that has accompanied meals will hopefully ease up. Lisa

' calgal08 I can understand what you are going thru - we just took our 12 year old boy to the vet on Wednesday and got an excellent report. In fact, she called him a "Seasoned Gentlemen". So here is thinking about you and your furbaby. As far as what's for dinner - we had a huge breakfast so we will have a cocktail and a snack - it's five o'clock somewhere.

I made it to Virginia and am so happy to be spending time with 3 of my kids. I took ds and his roommate out to Texas Roadhouse for a late lunch and when the girls get out of work/clinicals I'm taking them out for dinner. With all of their conflicting schedules, I'm guaranteed to come home 10 pounds heavier in just 4 days . So worth it!

We planned to go to Red Robin, but the traffic lights were out at the main intersection near there- we decided not to cross 8 lanes of traffic without benefit of a light, so we went to a local Coney place instead-dh had a patty melt and fries, I had a baby chicken yeros, baby Greek salad and half piece of spinach pie, and ds had a hani, fries, and a pita bread. Afterwards, we went to target, which was also on the agenda, and it happened to be in the same lot as the restaurant.

A friend of mine and I made applesauce all day with another batch of apples so we just ordered pizza. We are too tired to do much else!
