We have been invited to attend a Canadian themed dinner party. We were asked to pick a province, and bring 2 appetizers that reflect on that province.
As much as I would love to pick Quebec and go with poutine and something maple flavoured, I feel like that is just too obvious and no thought involved. KWIM?
Any suggestions for me?

BC Salmon, Lobster from Maritimes, PEI potatoes, Alberta Beef, many provinces are known for a food item that could then be used in appetizers

I get that. I can come up with a food, such as Alberta beef. But what kind of appetizer should I make with the beef beef and what do I make for a second appetizer.

Hmmm ... I'm from Alberta so I would do some sort of beef based thing ... not sure what that would be though Sorry I'm pretty much no help ETA: We are also known for our canola oil ... you could make a salad with high quality canola dressing

We do love our bacon! What about beef or seafood wrapped in bacon? My friend makes a scallop wrapped in bacon, brushed with soy sauce and baked until bacon is crispy. Yummy! you could also make creton which is a ground pork spread (kind of like a pate). It is very popular in Quebec. It's not my personal favourite, but my family loves it there's a recipe here: catherinecuisine.com/2014/01/13/cretons-de-porc/

Maybe meatballs or bacon wrapped steak bites for the beef? For your second appetizer what about a cheese based one? Sylvan Star is an Alberta based cheese maker. Or maybe a wheat berry salad?

Canada has the world's third largest Ukrainian population - after Ukraine and Russia. So a lot of "Canadian" food has a Ukrainian base. If you want to expand on that theme buy frozen perogies. The potato and cheddar Cheemo perogies if you can buy them where you live, though any frozen perogies will do. Take a package of bacon and cut the bacon slices in half. Wrap each frozen perogy in a half slice of bacon. Place frozen, bacon wrapped perogies on parchment paper on a cookie sheet (jelly roll pan). Bake at 350 for 20 minutes. Serve with sour cream. These are delicious.

What about making pea meal bacon sliders? I slice peameal thin and glaze with maple syrup and Dijon mustard and then BBQ the bacon. Throw a slice on some soft white slider buns with optional mustard for dipping. Add a bag of ketchup chips and you are done You can BBQ ahead of time and reheat quickly. It still tastes great.

We ended up taking smoked salmon(British Columbia) on baguette slices. I think there was cream cheese with capers and seasonings on the baguette slice and topped with smoked salmon. Then we did a potatoe based appetizer for PEI. Leftover mashed potatoes, bacon bits, green onion, shredded cheddar cheese mixed with one beaten egg. Then baked in a mini muffin pan and served with sour cream.
