I'm curious what the preferences are for using butter, lard, or shortening in pie crusts. What do you think works best?

I've only ever used butter. I don't think I've even seen lard or shortening in the supermarket.

I can't make a decent pie crust if my life depended on it. If I feel masochistic enough, I will devote a day to attempt the crust, but the majority of time I buy the Marie Calendar's pre-made frozen crusts. There was one time when the stars lined up just right and was able to make a wonderful shortbread crust, but I promptly lost the recipe and have been able to recreate it. Such is my luck with pie crusts.  Anyone have a recipe you want to share for a shortbread crust?? (and have you ever such a short post that used the word 'crust' so many damn times??  ) |

Whatever Mrs. Smith uses! But we use a Crisco-type shortening at school for pie crust and they are really good. Our baker is excellent.

We're fans of the Pillsbury ready-made, too. DH used to follow his grandma's recipe which used shortening, but since he found the Pillsbury crust, he hasn't made it from scratch again.
My grandma always used lard and her pies were phenomenal. I don't think I could buy lard, though, the word itself gives me the shivers. . .

Shortening and lard make for yucky tasting crust. Butter makes it buttery and delicious.
Jamie Oliver has a really good recipe for pie crust and it uses butter. It's very similar to my grandmother's recipe... and she only used butter.

That's what I use. Oh and ice cold water (ice cubes and water in a glass measuring cup) and then she put in her little sifter and then spooned out the water from that. |

My mom swore by lard, but she also used butter at times too. I have a recipe that calls for a combination of cream cheese and butter and it is so, so good! I was making a pumpkin pie for DH recently and was pondering aloud whether I should make the recipe as written (yield four 9" deep dish crusts) or cut it in half, since I would still have one extra to make a pie for Thanksgiving. He overheard me and said, "There's no such thing as too much pie! Make the whole thing!" |

I suck at pie crust... But I'm learning and getting better. I have a recipe for half crisco and half butter which is delicious and I have one that uses half regular crisco and half butter flavored crisco and it's delicious too. My DH is the baker and he prefers using crisco with it being half reg and half butter flavored

Cold butter. It creates steam as it bakes and results in an ideal flaky crust.

I also think that lard tastes the best.
I haven't made homemade pie crust in a long, long time. But I think I might try this year again.

Tenderflake lard. I think you can only get this brand in Canada. It makes the most delicious pie crust.

I don't have the time to make homemade crusts anymore but I used butter or a butter lard combo when I did.

Lard. I have found a premade frozen pie dough (you roll it out) that uses it. Best pie crust ever and so SO easy!

Half lard and half margerine for savoury, sometimes butter for sweet. Cold water, let the dough rest in the fridge for at least 20 minutes before rolling.  |

Everyone in my family except me uses the Tenderflake lard recipe with the egg and vinegar and they get perfect crusts. But for some reason I do not. But I came across a recipe years ago that calls for shortening and it is awesome for me.

Half Crisco and half butter. I put the Crisco in the freezer for awhile so that it is very cold. I also use very cold water and White Lily flour.

Lard. I know it is disgusting, but it is my grandmother's recipe, passed to my mom, and now passed to me, and I've given it to my son too.
Although, I have to admit I haven't made a pumpkin pie in ages. Costco's pie is what, $5.99? And tastes pretty good. I don't like their crust at all, but I figure that is a good thing because it makes me skip the crust and just eat the pumpkin filling. Less calories for me!
