I live in ND where we call casseroles hotdishes When I was growing up my Mom made a hamburger hotdish that we all loved. She browned hamburger with onion, salt and pepper and then added diced potatoes, raw rice, diced carrots and stirred in a mixture of cream of chicken soup, water and a little soy sauce. She then covered it and baked it for about an hour until the veggies and rice were done. I'm staring at my TPN and wishing it would magically turn into this comfort food for me Oh and I want a warm, flaky dinner roll dripping with butter to go along with it What are you planning to eat tonight?

I wish you could be magically all better. I'm planning to just eat leftovers tonight. There's a lot of them in the fridge. Fried rice, pizza, sausage and sweet potatoes. Even half a BLT, but I think I'm going to eat that now.

My youngest isn't feeling well. He had a fever last night, but is fever free so far this morning. He's barely eaten anything the last 3 meals and his voice sounds pitiful I didn't make the baked ziti last night so that's my plan for dinner. I'm not sure if J will eat it. If not, I will make him an almond milk smoothie and peanut butter toast. Does anyone have a tried and true recipe for pudding using almond milk?

I'm going to make the coconut curry chicken we were supposed to have last night but didn't since we ate out. I'll serve it over rice and have some roasted veggies on the side.

Breakfast for dinner. Scrambled eggs with biscuits and gravy. DH works in retail and he is putting in some very long hours this week. since I'm home, I'm happy to have a comfort dinner waiting for him.

My guy is working late so I'm making my homemade tomato soup for myself. I'll freeze the leftovers in single servings so I can have it for lunch some days.

Kathy, I can't remember why you were ill, and not sure what TPN (nevermind, I just remembered...ah man, bummer!) is but I hope you feeel better soon! I have to make a breakfast casserole for a potluck tomorrow so I won't feel like cooking too much dinner. One thing you reminded me of Kathy, about your casserole, was I FINALLY tried Impossible Cheeseburger Pie recipe last week. I was out of groceries and I had all the ingredients for that famous recipe off the Bisquick box, and my kid loved it! I was surprised, it was pretty good! Its just ground beef, onion, a few spices topped w/cheese and Bisquick topping. It was super easy. Anyway, IDK what I'm going to do about dinner. Since I'm making the bacon for the casserole, I should just fry two packages and maybe make some stir fried rice or something. Ahh..yes. I have leftover rice in the rice cooker, and I have some frozen shrimp and frozen veggies. Ah okay, that's it. Stir fried rice for dinner! Yay! I love these threads..they always become these stream of consciousness writing for me, helps me decide!

I think we are having the second half of the Costco Orange Chicken I bought a few weeks ago. Dh might stop at our Chinese restaurant to get some fried rice. If not, we will have white rice.

How I wish we could all wave magic wands and make you better Kathy.
Tonight I'm trying firecracker chicken meatballs, but they'll be with ground turkey instead of chicken, I think we'll have them over Trader Joes brown rice/grain and I'll cook up broccoli for the side.

I am not cooking tonight. Too much to do. All three kiddos will be home and we are headed to our Mongolian Grill. You choose the meat, veggies, seasonings and sauce and they cook it on the hot griddle. I love this stuff!

DD#1, my picky eater, will be here tonight so we will be having one of the 5 dishes she'll eat--three cheese chicken alfredo (she picks the chicken out and eats the noodles ). DD#1 also doesn't "do" fruits and/or vegetables, but I'll serve roasted vegetables, homemade applesauce, rolls, and something chocolate for dessert. So, if you were keeping track of my ramblings, dd#1 will eat the noodles, rolls, and the dessert. It wasn't easy, but I did manage to keep her alive and healthy until she because an adult.

I hope these dinner threads aren't torturing you too much, akathy! You're a good sport. Tonight we're having kielbasa and sauerkraut/cabbage. I brush the kielbasa with a BBQ sauce + mustard mixture, and put it on a bed of sauerkraut mixed with shredded cabbage. Then I just bake it for a little bit. So easy and good.

akathy I'm sorry you are still feeling poorly! Hang in there, honey! Yesterday's pizza was a hit and my brother, who really isn't feeling well this week ate half of his. Tonight it's the tacos we were supposed to have Saturday, then again on Sunday. It's not fun to cook food for just myself, especially when it's our family favorite! So, since he's feeling a bit better today, we'll do tacos. mmmmmmmmmmm

They really aren't torture. I've always thought in terms of food. Just the way my mind works I've had Crohn's since 1979 and have had to be on TPN and no food many, many times through the years. Just got home from picking up Bear from the groomers. He loves going in for his 'fluff and buff'. At the tune of $110.00 before a tip, I'd hope so!!! His hair appointments cost more than mine! I grocery shopped for 2 of the 3 hours he was there, and decided that we're having lasagna, garlic bread and salad tonight.

I zipped home on my lunch hour and put a beef stew into the crockpot. (I admit I took a shortcut and used a seasoning packet rather than make my own.) DS's fundraiser order came in last night, and we have several boxes of frozen Little Caesar's Crazy Bread in the freezer - I will make one of those to go on the side, and my kids and DH will be in heaven.

We are going to see "Planes, Trains & Automobiles" at our local theater tonight. My kids have never seen it, so looking forward to it! This is my very favorite 80's movie of all. I am grabbing taco Tues. for me, but I think the kids just want big subs from WalMart. That's fine with me. However, I will probably eat about two bites of my burrito and actually eat popcorn for dinner. I can already taste the buttery goodness! Lisa
