I'm contemplating chicken tortilla soup. TBD.
What's on your menu?
Have a wonderful week. Monday is just a day ending in Y. Saturday will be here soon.

We're having spicy shepherd's pie, roasted brussels sprouts and carrots, applesauce, bread, and cookies for dessert. ETA: My parents are heading to their winter home on Thursday, so we had Christmas with my family yesterday. (which is why I was absent from the dinner thread) Keep your eyes peeled for all of my family drama threads. As far as what was served yesterday, I'll just say that there was a ton of food, not including the cookies and desserts. There was enough food for everyone to eat two complete meals, and for everyone to take leftovers home with them. My mom doesn't want anyone to go away hungry and I don't think anyone did. The bulk of the work falls on me these days, but I'm happy to do it because it makes her so happy.

I'm leaning toward grilled cheese sandwiches and tomato soup. Easy peasy, and I'm tired today.

Lemon chicken orzo soup. I don't have time to stop at the store and pick up a crusty bread to go with it, I'm not in the mood to make a batch of biscuits so I think I might make Yorkshire puddings (popovers). I don't need anything to go with my soup but dh and the boys enjoy something bread-like on the side.

A pre-seasoned pork roast that I put in the crock pot
Baked potatoes - possibly mashed, but that's unlikely due to a hectic work schedule
Some type of veggie, likely broccoli.

Parmesan crusted salmon with broccolini and maybe a farro pilaf. I picked up the farro a while back and really need to use it, so will be cruising Pinterest for a recipe.

I'm supposed to go to book group tonight, but the weather turned this morning, and it is snowing. Since I am the youngest member of the book group at 59, I am doubtful the ladies will want to get out tonight.
So, I am going to rely on DBF to pull some protein out of the freezer for tonight, and we'll make a mean out of what we've got there.

Leftover Sloppy Joes for me and a homemade hamburger for DH. We had taken The Boy (our four legged "son") to Petsmart to pick out his own Christmas and all he wanted to do was smell the corners of the end cap where I'm sure another dog had marked his territory. Thank goodness he didn't feel the urge to mark it also.

Meatless Monday here. I have some leftover mac and cheese, and I plan to cook some green beans and roast some cauliflower.

I have a chuck roast in the crock pot with a bottle of bbq sauce. Will shred it and top with coleslaw on a bun.
I might make a pasta salad or throw some frozen fries into the oven.
I am hoping to make some jam thumbprint cookies. My family loves them.

I bought a Boston Butt on sale for $1.99/lb, so I threw that in the CrockPot this morning with some liquid smoke, Famous Dave's Rib Rub and Sweet Baby Ray's BBQ sauce. I will toast some rolls and be sad that I forgot to buy cole slaw. Chips on the side today, pierogies tomorrow when we have the sandwiches again. Need to clear some freezer room!

We're having pastrami sandwiches on homemade bread with some pepperjack cheese. I've got some plain chips and some sweet potato chips to go with them.

I'm making myself a bleu cheese burger- a burger topped with bleu cheese and caramelized onions, and a bit of BBQ sauce. And a side of coleslaw. Kids will have cheeseburgers on buns and carrot sticks.

I made Salisbury steaks with an onion/mushroom gravy, fried potatoes, steamed broccoli and baked mac n' cheese. I've got a huge assortment of cookies for dessert.
