I know it seems hard to imagine, but I have a bunch of leftover buffalo chicken dip from last night. I made a lot of appetizers and now I'm trying to come up with something creative to do with this buffalo chicken dip. It was the first time I made it and I was actually really happy with the recipe I chose. I searched and found a couple ideas that didn't really wow me - over pasta or rice or in a sandwich, which seemed odd. Any other ideas of what to do with it? Here's the recipe if anyone's interested. It's really easy and delicious!
2 cups cooked, cubed chicken breast (can use rotisserie chicken, grilled or poached chicken or 2 cans chicken) 2-8 oz. blocks cream cheese, softened 1/2 cup ranch dressing 1/2 cup blue cheese dressing 3/4 cup Frank's Red Hot Sauce 1 1/2 cups finely shredded cheese (use whatever is your favorite I used the Kraft Mexican Four cheese mix and loved it)
Preheat oven to 350 degrees. Mix the cream cheese with both dressings and hot sauce until well blended. Stir in chicken. Pour into pie plate or shallow baking dish. Too with shredded cheese. Bake for 30 minutes or until cheese is golden brown and bubbly. Serve with French bread slices, tortilla chips, crackers, bread sticks or Fritos scoops

We added it on top of more chicken and put it in a sandwich - it was a hit. I could see it on pasta to but we really love buffalo sauce.

Heat it in a skillet. Scramble an agg with it. Great breakfast burrito.

We have used it up by making it into a grilled cheese type sandwich. Yummy!

Grilled cheese or in corn tortillas, rolled up like a taquito and baked until crispy.
Stuffed jalapenos? Stuffed sweet peppers?

I have never done it myself, but I have seen where people put it on top of a baked potato. Teresa

I'd just eat it!
You could also freeze it. But I think in a grilled cheese type sandwich, with tomato soup would be good.

We get buffalo chicken wraps at a local place. Put it with some lettuce and tomatoes and wrap it in either a tortilla or roll it in lettuce. Yummy!

I eat low carb and love to use Celery sticks (instead of chips) to dip in it.

Add more chicken and have hot sandwiches with french bread. Or freeze it. I have and it holds up well.

We stuff it in pierogi dough! You can also spread it in pizza dough.
It can be frozen if you do the pierogi's

I have never done it myself, but I have seen where people put it on top of a baked potato. Teresa I was going to suggest this! I haven't done it with this particular dip, but we do it with other creamy cheese dips. We didn't finish Charleston Cheese dip tonight, it is great on potatoes! Geez is it potatos? I swear autofill has screwed up my spelling memory!!! ETA saw my post and immediately knew right answer- don't post while wine-ing.
