Happy Friday! DH was supposed to get home from Las Vegas (he was there for CES) late tonight and DD, because it's Friday, will no doubt not be home for dinner, so I made plans with a friend to go out for Thai food. Yum! Of course, now DH should be home by 5pm, but that's too bad. I'm still doing Thai food with my friend!

Dinner last night at Sprouts was a success. I had a ginormous grilled pannini (SP? Sorry) for $4.99 since I wanted something hot.
Tonight, it's just the younger boy and I. I think he wants Subway. I will probably grab Thai curry as I have not had it in a while.

We're having creamy chicken enchiladas, packaged mexican rice that I doctored up, tortilla chips and salsa, fruit platter (melons, pineapple, blueberries, strawberries), and brownies with peanut butter frosting.

I forgot to take chicken out of the freezer last night so I think I am going to make a cheesy bean and rice skillet and then add it to a flour tortilla with tomatoes, lettuce, sour cream and guacamole. So it will be like a 7 layer burrito.

I have to go out & buy party supplies this evening for a teen invasion tomorrow night (having a combined bday party for DD & DS & yes they want it that way - they are very close) so I will eat on the go.... I was up mopping & vacuuming at 5AM so I am DEFINITELY NOT COOKING!

Meat pies and a tossed salad. Meat pies are made of angel roll dough and filled with seasoned, browned beef. I made the rolls last night to entice DH to eat ham, and have enough dough left over for the "pies". I use a hamburger press to cut the pie halves from the dough; fill with the meat; add a top half; and bake. Simply, but good!

Gah! I have to cook again?? My choice tonight will only be eaten by dh and me: Skinny Chicken EnchiladasDd#1 can fend for herself which probably means grilled cheese or mashed potatoes Dd#2 just had braces put on and is in pain so she will want applesauce and ice cream

The enchiladas are a family favorite! The recipe came from the old board. Creamy Chicken EnchiladasThe dessert thing? Well, dh has certain criteria, shall we say, regarding dinners. Dinners must include meat (but a dinner salad containing meat does not qualify. Nor does soup.), and dinners must have a dessert. He's not a picky eater and does not care about what I serve, as long as it includes meat and a dessert. Works for me! Oh, and cookies are a dessert for lunch, not dinner. But, sometimes I serve them after dinner anyway

I don't know. My dad has a bad head cold and I think DH is coming down with one so I think chicken soup might be the best thing for both of them. I intend to disappear while they eat, I don't need or want a cold.

You would think that after spending about $300 today between Costco and Trader Joes that I would have something to make for dinner. But I don't. Plus, dd is still not feeling well and DH is still out of town. So, it looks like it will be pizza for the boys and salad for me. I will get my act together and cook a real dinner this weekend

I had left over Cheesecake Factory (chicken tostado salad.) And, because I was full at lunch, that silly piece of chocolate deliciousness otherwise known as a some kind of Hershey chocolate cake with a layer of chocolate cheese cake and chocolate ganache icing and extra whip cream came home with me. So really, the left over salad was social convention to make it seem like there was an actual dinner involved, when it fact it is really the chocolate orgasm that is the real meal.
